We start this delicious butter and cocoa cake recipe by preparing the necessary ingredients. Make sure the butter is at room temperature so that it is easy to mix. In a large bowl, add 200 grams of butter and 150 grams of powdered sugar. Using a mixer, beat the mixture on medium speed until you get a fluffy and light-colored foam. This is the perfect time to add 4 egg yolks, one at a time, continuing to mix until the composition becomes homogeneous and creamy.

Next, you will incorporate the dry ingredients: the requirement is to add 250 grams of flour and 10 grams of baking powder. Gently mix with a spatula or wooden spoon until you no longer see streaks of flour. This is the time to add the citrus flavor, so grate the zest of one lemon, being careful not to include the white part, which is bitter. This will add a fresh note and a pleasant taste to your cake.

Separately, in another bowl, beat the egg whites from the 4 eggs until they form stiff peaks. This step is essential for achieving a slightly airy texture at the end. Once the egg whites are beaten, fold them into the yolk mixture, mixing gently from top to bottom to keep the air in the mixture.

Once the two mixtures are well integrated, divide the dough into two equal parts. In one of them, add 4 tablespoons of good quality cocoa, mixing well until you achieve a uniform color. Now, it's time to assemble the cake. In a loaf pan lined with baking paper, start alternating teaspoons of the yellow batter and teaspoons of the brown batter. Continue this process until both compositions are finished, and the visual effect will be impressive.

Preheat the oven to 170 degrees Celsius and place the pan in the oven. Let the cake bake for about an hour on low heat, checking it occasionally with a toothpick. When it's ready, take it out of the oven and let it cool.

To give it an elegant finish, sprinkle it with powdered sugar mixed with a packet of vanilla or opt for a glaze made of lemon juice and powdered sugar. Thus, your cake will not only have a wonderful taste but also an attractive presentation, perfect for being enjoyed alongside a cup of tea or coffee. Enjoy your meal!
