Chocolate Biscuit Cake
The cookies break into larger pieces, and in a spacious bowl, coarsely chopped nuts are added to provide a crunchy texture and a unique flavor. In a saucepan, we mix sugar with cocoa and water, then place the mixture on the heat. We add diced butter, which will bring extra creaminess and flavor. We stir constantly until the butter completely melts. Once the butter has melted, we leave it on the heat for another 1-2 minutes, continuing to stir carefully to achieve a smooth syrup. This delicious syrup is poured over the cookies, mixing everything carefully to ensure that each piece of cookie is well covered.
The next step is to line a round cake pan with removable walls, with a diameter of 26 cm, with plastic wrap or parchment paper. After preparing the pan, we add the cookies mixed with syrup, gently pressing and leveling the surface, then we leave the pan in the refrigerator to set.
While we wait, we take care of the cream cheese. We melt 150 g of white chocolate in a double boiler and let it cool. In another bowl, the cream cheese is mixed at high speed with 200 ml of liquid cream, which is added gradually to achieve an airy and smooth texture. When the white chocolate is cool, we take a tablespoon of it and incorporate it into the cream cheese, mixing vigorously to ensure perfect homogenization.
Once the cream is ready, we take the pan out of the refrigerator and spread the cream cheese evenly over the cookie base, leveling it with a spatula and refrigerating again for at least 45 minutes. In the meantime, we heat the liquid cream and pour it over the bitter chocolate, letting it sit for a few minutes to combine. We whisk until we obtain a smooth glaze.
The cooled glaze is carefully poured over the cream cheese, leveling it to achieve a perfect surface. We decorate the cake with walnut pieces and grated white chocolate for an appealing look. We let the cake chill overnight to set well. The final result is a refined cake that is easy to make, perfect for enjoying on New Year's Eve. Enjoy!
