Bicolored Balls
To create a delicious recipe for coconut and cocoa balls, we start by preparing the white mixture, which will bring a note of freshness and a crunchy texture. In a clean bowl, we beat the egg whites until they become fluffy and hold their shape. It is essential that the bowl is completely dry, with no trace of fat, to achieve a perfect foam. Once the egg whites have reached a firm consistency, we gradually add the powdered sugar, continuing to mix until the sugar is completely dissolved and the mixture becomes glossy. At this point, we add the coconut flakes, which will provide an intense flavor and pleasant texture. If we notice that the mixture does not bind enough, we can add an additional beaten egg white, gently mixing to avoid destroying the incorporated air.
After finishing with the white mixture, we move on to preparing the brown mixture. In another bowl, we cream the soft butter with the powdered sugar and vanilla sugar until the mixture becomes creamy and airy. It is important that the butter is at room temperature to incorporate easily. After obtaining a fine cream, we add the egg yolks one by one, mixing well after each, and a beaten egg white to add a fluffy texture. We sift the cocoa, which will provide a deep color and intense flavor, and carefully incorporate it, followed by the sifted flour mixed with baking powder. We mix everything until we obtain a homogeneous mixture.
From this brown mixture, we shape balls slightly larger than a walnut. We flatten them slightly, and in the center of each ball, we place a small ball of the coconut mixture. Then, we wrap the coconut ball with the cocoa dough, forming a perfect ball again. It is crucial to smooth the surface well to prevent cracking during baking. We place the balls on a baking tray lined with parchment paper, leaving enough space between them, as they will puff up during baking. We preheat the oven to 180 degrees Celsius and bake the balls for 15-20 minutes until they become golden and slightly firm to the touch. After they have completely cooled on a rack, we can serve them plain or decorate them with coconut or cocoa, or even with a chocolate sauce for a special visual effect. These delicious balls are ideal as a dessert or snack, bringing a touch of joy in every bite.
