Yellow bean salad with mayonnaise
Bean salad is a simple and delicious recipe, perfect for any occasion. It can be served as an appetizer, side dish, or even as a main course on hot summer days. We start by cleaning the bean pods, making sure to remove all the fibers and tough parts. After cleaning them, we wash them well under a stream of cold water to remove any impurities.
In a pot, we put cold water, add a pinch of salt, and wait for it to reach boiling point. Once the water starts to boil, we add the bean pods. It is important to let them boil for about 10-15 minutes until they become tender but not overly soft. After boiling, we drain them and place them in a colander, allowing them to cool completely. This step is essential to maintain the crisp texture of the salad.
Once the pods have cooled, we cut them into small pieces, then transfer them to a large bowl. Here, we add crushed garlic, which will give the salad an intense and pleasant aroma. We sprinkle salt to taste, keeping in mind that the mayonnaise will also add a certain level of saltiness.
For the mayonnaise, we will use a simple but effective method. In the blender bowl, we put one egg and a pinch of salt. We mix for a few seconds, then start to add the oil gradually to achieve a perfect emulsion. It is important to add the oil slowly to avoid separating the ingredients. Finally, we add lemon juice, which will add a fresh taste and balance the flavors.
After the mayonnaise is ready, we add it over the bean pods. We mix gently, ensuring that each piece of bean is evenly coated. Then, we finely chop the fresh dill and add it to the salad, along with ground pepper. We mix again, tasting to check if more salt or other spices are needed.
The bean salad can be served immediately, but it is even more delicious if we let it sit in the refrigerator for an hour, so the flavors combine perfectly. This salad is not only tasty but also full of nutrients, making it an excellent choice for a balanced diet. Enjoy!
