Preheat the oven to 200 degrees Celsius, so that it is ready to provide the necessary heat to bake the perfect omelette. While the oven is heating up, start whisking the egg yolks well with a pinch of salt until the mixture becomes homogeneous and whitens. This step is essential, as the air introduced into the yolks will contribute to a fluffy texture of the omelette. Once the yolks are well mixed, gradually add the flour and/or starch, constantly mixing to avoid lumps. Incorporating these ingredients will give consistency and help bind the mixture.

Then add the fresh chopped parsley and season with pepper to taste, to bring an extra flavor. Once all the ingredients are well integrated, start diluting the mixture with milk. It is recommended to add the milk gradually, little by little, whisking vigorously each time to ensure a smooth and creamy consistency.

In another bowl, beat the egg whites until stiff peaks form and they become firm and shiny. This step will add extra volume to the mixture and make the omelette fluffier. Carefully fold the egg whites into the yolk mixture, mixing gently from the bottom up, by folding. This step is crucial to maintain the air in the egg whites and not lose volume.

Prepare a heat-resistant dish in which you will bake the omelette, placing the butter in it and putting it in the preheated oven until the butter is melted and starts to bubble. Carefully remove the dish from the oven and immediately pour the egg mixture into the hot dish. This technique will create a delicious crust. Reduce the oven temperature to 180 degrees Celsius and let the omelette bake for about 10 minutes, or until it is well set and beautifully browned.

Once the omelette is ready, take it out of the oven and let it cool for a few minutes before slicing. Serve immediately, either plain or alongside a glass of creamy yogurt, or accompanied by a salad of your favorite raw vegetables or pickles. You can also use this omelette as a base to add cooked or grilled vegetables, or to combine it with cooked meat or fish. This omelette is not only delicious but also extremely versatile, being able to be adapted to everyone's tastes.
