Mushroom and zucchini ciulama

Mushroom and zucchini ciulama is served hot, usually for dinner, with a thickened white sauce and tender vegetables. The zucchini finely chopped with the onion disappears into the base, while the mushroom and pepper pieces stay nestled in a sauce thickened with milk and starch. I serve it alongside polenta while it’s still piping hot. Prep: 20 minutes. Cook: 30 minutes. Total: 50 minutes. Servings: 4. Approximately 230 kcal and 7 g protein per serving.
Ingredients
- 400 g mushrooms
- 2 large onions (300 g)
- 400 g young zucchini
- 2 red bell peppers (300 g)
- 3-4 tablespoons oil
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1/2 teaspoon granulated garlic
- 1 teaspoon mustard seeds
- 100 ml water
- 1 1/2 tablespoons starch
- 250 ml cold milk
- 1 level tablespoon sweet paprika
- 15 g fresh parsley
Preparation
1. Clean and wash the vegetables. If the zucchini is young, leave the skin on. Cut half the zucchini into chunks and finely chop it in a food processor with the peeled onions. 2. Heat 3-4 tablespoons of oil in a pan and cook the mixture over medium heat for 10 minutes, stirring from time to time. 3. Cut the peppers into strips and the other half of the zucchini into small cubes. Quarter the mushrooms and add them to the pan with the peppers, zucchini and mustard seeds. Pour in 100 ml of water and simmer over low heat for 10 minutes, until the vegetables soften. 4. Add 1 teaspoon of salt, 1/2 teaspoon of ground pepper and 1/2 teaspoon of granulated garlic. Mix the starch with the cold milk, pour it over the vegetables and stir over low heat for another 10 minutes, until the sauce thickens. 5. Sprinkle with the sweet paprika and chopped parsley, then serve with fresh polenta.
Notes
Serve with fresh polenta while the sauce is still hot. Choose a young zucchini with thin skin; if it’s mature, peel it and remove the soft seeds. Cut the mushrooms into pieces of roughly the same size, and if they release a lot of liquid, cook the vegetables uncovered until it reduces. I start cooking the ciulama shortly before the polenta is ready, so I can bring them to the table together. Store in a covered container in the refrigerator for up to 3 days; when reheating, thin the sauce with 1 tablespoon of milk. For a dairy-free version, replace the milk with 250 ml of unsweetened soy drink. This dish contains milk.
Frequently asked questions
Can I use frozen mushrooms?
Yes. Add them straight to the pan and cook the vegetables for 5 minutes longer, without adding the water from the cooking step.
What should I do if the sauce has thickened too much?
Gradually stir in 30 ml of warm milk until the sauce becomes runny again.
Can I replace fresh parsley with dried parsley?
Yes, use 1 teaspoon of dried parsley and sprinkle it in with the paprika.
