Dough: In a large bowl, we place the sifted flour mixed with a pinch of salt to enhance the flavor of the preparation. We crumble the fresh yeast with sugar until it completely dissolves, then add it to the flour. We start kneading the dough carefully, adding water gradually, little by little, until the dough becomes non-sticky and easy to shape. It is important to pay attention to its consistency, so once we achieve the desired texture, we stop adding water. Finally, we incorporate the oil, which will give a pleasant flavor and make the dough flakier. After mixing well, we cover the bowl with a clean towel and let the dough rise in a warm place for about 40-50 minutes, until it doubles in volume.

Filling: We begin preparing the filling by peeling the onion, which we chop finely, and peeling the carrot, cutting it into small cubes for even cooking. We remove the seeds from the bell pepper and cut it into strips, and we peel and chop the tomato into suitable pieces. In a heated pan, we add the oil and then put in the onion and carrot, sautéing them for 2-3 minutes until they become slightly translucent. We add the bell pepper and tomato, letting them cook together for another 2-3 minutes. Then, we introduce the minced meat, mixing well with a spatula to prevent lumps from forming. We pour in a cup of water and season with salt, pepper, and dried basil. We let the mixture simmer over medium heat until the liquid reduces. A few minutes before turning off the heat, we add the roasted pepper paste and tomato paste, stirring well to combine the flavors. When the filling is ready, we let it cool slightly and add a beaten egg and finely chopped fresh dill, mixing everything to obtain a homogeneous composition.

We wash the mushrooms and pat them dry with a kitchen towel to remove excess water. We prepare a 24/37 cm tray, lining it with baking paper. We roll out a thin sheet of dough and place it in the tray, making sure it goes up the edges as well. On top of the dough sheet, we put the minced meat filling, leveling it evenly, then we arrange the mushrooms on top. Finally, we grate cheese over the entire surface. We place the tray in the preheated oven at a moderate temperature, allowing it to bake for about 40-45 minutes until the tart turns a nice golden brown and becomes appetizing. When it's ready, we take it out of the oven and let it cool slightly before slicing. Enjoy each piece with pleasure! Bon appétit!

Filling: 400 g minced meat mix, 1 small jar mushrooms, 1 small carrot, 1 onion, 1/2 yellow bell pepper, 1 large tomato, 1 tablespoon pepper paste with kapia, 4 sprigs fresh dill, 3 tablespoons oil, 150 g cheese, 1 heaping tablespoon tomato paste, salt, pepper, 1/2 teaspoon dried basil, 1 egg.
