Ham rolls filled with raw vegetable salad

Patting the vegetables dry helps the filling hold together in ham rolls filled with raw vegetable salad, with pressed ham, apple and mayonnaise. I grate the carrot and celeriac finely, and choose firm-fleshed peppers so I can cut them into thin strips that stay whole in the filling. Preparation: 30 minutes. Cooking: 10 minutes. Resting: 10 minutes. Total time: 50 minutes. Servings: 6. Approximately 480 kcal and 20 g protein per serving.
Ingredients
- 5 small carrots (250 g)
- 1 large celeriac (500 g)
- 2 medium apples (300 g)
- 2 small red peppers (200 g)
- 15 ml lemon juice
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 2 eggs
- 1 raw egg
- 200 ml sunflower oil
- 36 slices Sissi pressed ham
- 1000 ml water
Preparation
1. Peel and wash the carrots, celeriac, apples and peppers, then pat them dry thoroughly. Grate the carrots and celeriac on the fine side of a grater, the apples on the coarse side, and cut the peppers into thin julienne strips. Allow about 15 minutes. 2. Put the 2 eggs in a saucepan with 1000 ml water. Once the water comes to a boil, cook them for 10 minutes, until the yolks are firm. Take them out and leave them to cool for 10 minutes. 3. Peel the hard-boiled eggs and mash them with the raw egg. Gradually add 200 ml oil, stirring constantly for about 5 minutes, until the mayonnaise comes together. 4. Mix the grated vegetables with 15 ml lemon juice, 1 teaspoon salt and 1/2 teaspoon pepper. Add the mayonnaise and mix until combined. 5. Put some filling on each of the 36 ham slices and roll them up. Allow about 10 minutes for filling and rolling.
Notes
A tart apple keeps the filling balanced; if it’s very juicy, pat the grated flesh with a paper towel before mixing it in. For the celeriac, remove the thick peel and fibrous part, which stay tough even after grating. The filling is reminiscent of the raw vegetable salad served alongside schnitzel, tucked into a slice of ham. If you make it ahead, keep the filling in the fridge and roll the slices shortly before serving. Serve the rolls with fresh bread.
Frequently asked questions
What should I do if the ham slices tear?
Overlap two pieces by about 2 cm and put a level tablespoon of filling over the join.
Can I use celery instead of celeriac?
Yes, use 150 g very finely chopped celery; the filling will be crunchier and moister.
Can I make the mayonnaise without raw egg?
Mash 2 hard-boiled yolks and gradually add 100 ml oil in a thin stream, stirring until it comes together.
Can I use turkey ham too?
Yes, choose 36 thin slices, about 12-15 cm long, so you can add the filling and roll them easily.
