Cream: Now we turn our attention to the delicious cream. Put the cheese, which can be ricotta or cottage, in a separate bowl and mix it with the sugar and egg yolks until it becomes a smooth and creamy paste. Then add the mascarpone, which will add a rich texture and delicate flavor, and the grated lemon zest, which will intensify the flavors. In another bowl, beat the egg whites with a pinch of salt until stiff and fluffy. Fold them into the cream cheese, but very carefully, using a spatula to keep the air out of the egg whites.

Preparing the cake: Cut the peach halves into thin slices. Line a 26 cm round baking pan with baking paper to prevent the cake from sticking.
