Vegetable soup with semolina dumplings
To prepare a delicious vegetable soup with dumplings, we start by carefully cleaning and washing the vegetables. You can choose a variety of vegetables, such as carrots, potatoes, celery, parsnips, and peppers, depending on your preferences. Once the vegetables are clean, we cut them into uniform-sized cubes to ensure even cooking. In a large pot, we add 3-4 liters of water and a little salt, then we put the vegetables to boil. It is important to keep the heat low, so that it simmers slowly, allowing the flavors to gradually unfold.
In the meantime, we take care of the dumplings. In a separate bowl, we beat the eggs well with a pinch of salt to aerate them. Then, we add the two tablespoons of oil, which will give the dumplings a finer texture and a pleasant taste. This is where the step of adding semolina comes in. It is important to add it tablespoon by tablespoon, stirring continuously to avoid lumps. The mixture should be homogeneous and slightly dense, but not excessively hard.
When the vegetables have started to soften, using a spoon, we take portions of the dumpling mixture and carefully pour them into the hot soup. This step is essential, as the dumplings will swell in volume during boiling. We cover the pot with a lid and let everything simmer on low heat. During this stage, it is recommended to sprinkle the dumplings with cold water 2-3 times to help them become fluffy and airy.
After about 10-15 minutes, when the dumplings are half-cooked, we add the tomato juice to enrich the flavor of the soup. We season with salt and pepper to taste, being careful not to overdo it, as the vegetables already bring a contribution of flavor. We let the soup continue to boil, so that all the ingredients combine harmoniously.
When the soup is ready, and the vegetables and dumplings are properly cooked, we add the freshly chopped parsley, which will add a note of freshness and color to our dish. This soup can be served both hot and cold, depending on your preferences. It is an excellent choice for cool days, but also for moments when you need a light and healthy meal.
