Goulash soup (Gulyásleves)

Soups - Goulash soup (Gulyásleves) by Dida L. - Recipia

Beef goulash soup takes me back to childhood; meat simmered until it falls off the bone stays tender in the broth. Carrot, celery, parsnip, kohlrabi, tomatoes and peppers come together with potatoes, paprika and caraway in a hearty soup with caraway’s warm aroma. I choose bone-in shank because I like there to be a few pieces of meat to pull off when serving. Prep: 25 minutes. Cook: 168 minutes. Total: 193 minutes. Serves: 6. About 330 kcal and 24 g protein per serving.

Ingredients

  • 1 kg bone-in beef (round and shank)
  • 2500 ml water
  • 2 tablespoons beef fat skimmed from the soup
  • 1 medium onion (150 g)
  • 2 medium carrots (150 g)
  • 100 g kohlrabi
  • 100 g celery
  • 1 medium parsnip (120 g)
  • 1 red pepper (150 g)
  • 1 green pepper (150 g)
  • 1 teaspoon paprika
  • 3 peeled tomatoes (450 g)
  • 1 tablespoon caraway seasoning or 1/4 teaspoon ground caraway
  • 1 bay leaf
  • 1 teaspoon salt
  • 2 medium potatoes (300 g)

Preparation

1. Pat the meat dry with paper towels. Put it in a large pot with 2500 ml water and simmer for 120 minutes, until the meat comes easily off the bone. 2. Remove the meat and set it aside. Pour the broth into a bowl, skim off 2 tablespoons of fat from the surface and return them to the same pot. Finely chop the onion, carrots, kohlrabi, celery, parsnip and peppers, then sauté for 8 minutes, until softened. 3. Add the paprika and peeled, chopped tomatoes, then pour in the hot broth. Add the caraway seasoning or ground caraway, the bay leaf and salt. Simmer for 20 minutes, until the vegetables are tender. 4. Peel the potatoes and cut them into small cubes. Cut the meat into small pieces, add both to the pot and simmer for another 20 minutes, until the potatoes are tender.

Notes

Serve in deep bowls with rye bread on the side. Caraway is key here, and caraway seasoning and plain ground caraway are not measured the same way, so stick to the amounts in the list. The meat simmering is the step many people rush; the shank needs to come easily off the bone, even if the round softens sooner. If there’s a thick layer of fat on the broth, skim off the excess before measuring the two tablespoons for sautéing. The soup keeps in the fridge for up to 3 days.

Frequently asked questions

Can I use boneless beef round?

Yes. Cut 1 kg of round into pieces about 4 cm across and simmer for around 90 minutes, until easily pierced with a fork.

Can I use canned tomatoes?

Yes, use 300 g canned peeled, chopped tomatoes instead of fresh ones.

How large should I cut the potatoes?

Cubes about 1.5 cm across are small enough for soup and hold their shape while cooking.
