Sweet salad dressing

Orange and lemon zest give this sweet salad dressing its unusual note. It’s mixed cold with mayonnaise and white wine vinegar. The mixture is creamy, with fine bits of citrus and a sweet-and-sour taste, and it coats the leaves easily. I really like the smell of freshly grated orange zest. Preparation: 7 minutes. Cooking: 0 minutes. Total time: 7 minutes. Servings: 4. About 160 kcal and 2 g protein per serving.
Ingredients
- 1 medium lemon (zest)
- 1 medium orange (zest)
- 30 ml lemon juice
- 50 g mayonnaise
- 25 g milk
- 25 g whipping cream
- 4 tablespoons white wine vinegar (60 ml)
- 50 g sugar
Preparation
1. Wash and dry the lemon and orange. Finely grate the zest from both fruits, then squeeze the lemon to get 30 ml of juice. This takes about 5 minutes. 2. Put 50 g of mayonnaise in a bowl. Add 25 g of milk, 25 g of whipping cream, 4 tablespoons of white wine vinegar, 30 ml of lemon juice, the grated zest and 50 g of sugar. Mix for 2 minutes, until the sauce is smooth. 3. Pour the sauce over the salad.
Notes
Store it in a sealed container in the fridge and use within 3 days. Finely grate the citrus and take only the colored part of the zest, since the white layer can make it bitter. Choose an orange with smooth, fragrant skin. Soft spots are a sign to pick another one. Don’t rush the mixing: granulated sugar needs a few extra turns to dissolve in the cold liquid. Mayonnaise varies in saltiness and acidity, so taste the sauce before adding more vinegar. I put it over a green salad with cucumber and tender leaves. For a lactose-free version, use 25 g each of lactose-free milk and whipping cream. Mayonnaise usually contains egg, and milk and whipping cream are dairy.
