To prepare a delicious vegetable dish with green beans, we start by preparing the necessary ingredients. You will need a large onion, two peppers (preferably one red and one green for color contrast), a ripe tomato, a few cloves of garlic, 400 grams of fresh or frozen green beans, a bunch of fresh parsley, salt and pepper to taste, and two glasses of water.

In a deep skillet or pot, heat a little olive oil. Once the oil is well heated, add the chopped onion in small pieces. Stir gently to avoid burning, allowing it to sauté for about 5 minutes until it becomes glassy and starts to soften. Then, add the cleaned and julienned peppers. Sprinkle a pinch of salt to speed up the softening process of the vegetables. Continue cooking the mixture, stirring occasionally, for another 5-7 minutes.

Once the peppers and onion are soft, add the diced tomato to add a note of freshness and sweetness to the dish. Also, add the finely chopped garlic, which will give a flavorful and savory taste. Mix everything well, allowing the ingredients to combine for a few minutes. Then, add the green beans, which will not only enrich the texture but also the color of the dish.

After all the ingredients are mixed, pour the two glasses of water into the skillet and bring everything to a boil. Once the water starts boiling, reduce the heat to medium and cover the skillet with a lid. Let it simmer for 15-20 minutes until the water reduces and the vegetables become tender.
