Chicken breast salad

Chicken breast salad brings together leafy greens, sliced tomatoes, red onion and olives with boiled chicken; lemon juice gives it a tangy flavor. I first had it at a restaurant and liked it; at home, I start with the chicken and let it cool for ten minutes before cutting it, so the leaves stay crisp in the bowl. I serve it in wide bowls so the leaves don’t get crushed. Prep: 20 minutes. Cook: 20 minutes. Rest: 10 minutes. Total time: 50 minutes. Serves: 2. About 470 kcal and 48 g protein per serving.
Ingredients
- 1 boneless chicken breast (400 g)
- 1500 ml water
- 1 teaspoon salt
- 1 head of lettuce (150 g)
- 3 medium tomatoes (450 g)
- 1/2 red onion (75 g)
- 50 g olives
- 30 ml olive oil
- 15 ml lemon juice or vinegar
Preparation
1. Pat the chicken breast dry with paper towels. Put 1500 ml water and 1/2 teaspoon salt in a pot; when the water comes to a boil, add the chicken and simmer for 20 minutes, until the center reaches 74°C. 2. Take the breast out of the water and let it cool for 10 minutes, then cut it into small cubes. 3. Wash and dry the lettuce, then tear it into pieces. Slice the tomatoes and thinly slice the onion. If the olives have pits, slice them and remove the pits. 4. Put the lettuce, tomatoes, onion, olives and chicken in a bowl. Add 30 ml olive oil, 15 ml lemon juice or vinegar and 1/2 teaspoon salt, then toss gently.
Notes
Serve the salad with fresh bread, good for soaking up the juices left in the bowl. Choose a head of lettuce with firm leaves; if the tomatoes are very juicy, remove the seedy part before slicing them. Olives can be salty, so you can use less salt in the salad. Instead of 15 ml lemon juice, use 15 ml vinegar. Chicken salad keeps covered in the fridge for up to 3 days, but the leaves gradually soften.
