Sweet-and-sour Pikant Fix pickles

Sweet-and-sour Pikant Fix pickles sit in a sweet-and-sour brine with vinegar and sugar, then cool, covered, until the next day. 10 kg of cucumbers make 27 jars of 800 g, with carrot and onion slices at the bottom. I choose firm, small ones so I can pack them tightly into the jars without forcing them. Preparation: 90 minutes. Cooking: 30 minutes. Resting: 12 hours. Total time: 14 hours. Servings: 27. Approximately 180 kcal and 2 g protein per serving.
Ingredients
- 10 kg cucumbers
- 1.5 kg carrots
- 1 small onion (80 g)
- 135 g mustard seeds
- 6000 ml water
- 1300 ml 9° vinegar
- 600 g sugar
- 4 sachets sweet-and-sour Pikant Fix
- 27 jars of 800 g
Preparation
1. Wash the jars and cucumbers. Peel the carrots and onion, then cut them into rounds. Washing and preparing everything takes about 30 minutes. 2. Put carrot and onion rounds in the bottom of the jars, add the mustard seeds and pack in the cucumbers. Filling all 27 jars takes about 60 minutes. 3. In a large pot, combine 6000 ml water, 1300 ml 9° vinegar, 600 g sugar and 4 sachets of sweet-and-sour Pikant Fix. Bring the mixture to a boil in about 25 minutes; once it boils, stir constantly for another 5 minutes. 4. Pour the hot brine into the jars, filling them one by one, then seal them with lids. 5. Cover the jars with a blanket and leave them to cool until the next day, about 12 hours. Then store them in a cool, dark place.
Notes
Serve them alongside a roast or in a meat sandwich, where their sweet-and-sour taste works well. Once cooled, keep the sealed jars in a cool place away from light. Choose firm cucumbers with no soft spots or damaged skin; small ones of a similar size are easier to pack into the jars. If you have very large cucumbers, save them for another batch, since slicing them changes how they fit among the whole ones. Use 9° vinegar for the stated amount, not a weaker vinegar in the same quantity. Sweet-and-sour Pikant Fix can be replaced with a commercial sweet-and-sour pickling mix, measured according to the package directions for 27 jars.
Frequently asked questions
Can I use larger cucumbers?
Yes, you can cut them lengthwise into quarters, into pieces about 6-8 cm long, and pack them among the whole ones.
What can I use instead of Pikant Fix?
Choose a sweet-and-sour pickling mix and use the amount indicated on the package for 6 l of water.
Why did the cucumbers go soft?
They can go soft if they were soft or bruised before going into the jar. Sort them and use only firm cucumbers with intact skin.
