Udon
To prepare a delicious udon recipe, start by sifting the flour into a large bowl, making sure it is aerated and free of lumps. Once you have done this, create a well in the center of the flour, like a small volcano, which will be the meeting place for the ingredients. In another container, dissolve the salt in warm water, mixing well to ensure the salt dissolves completely. Once the salt is well dissolved, slowly pour the salty water mixture into the well in the center of the flour, beginning to mix with a fork or spatula until the ingredients start to combine.
Continue mixing until you obtain a homogeneous dough that no longer sticks to your hands. Now, take the dough and place it in a Ziploc bag, then, according to a Japanese tradition, jump on it 100 times. This method is not only a fun way to entertain yourself but is said to help strengthen the texture of the dough. After this activity, take the dough out of the bag and cover it with a damp cloth, letting it rest for two hours. This resting time is essential to allow the gluten to develop, making the udon more elastic and flavorful.
After the dough has rested, sprinkle flour on a clean work surface and roll the dough out into a sheet about 3 mm thick. Then, fold the dough sheet into three, so that it forms a structure that looks like the letter 'S' when viewed from the sides. Use a sharp knife to cut strips 3 mm wide, being careful to gently separate them to avoid sticking. Make sure you have enough flour on the work surface so that the strips remain separate.
To cook the udon, bring a large pot of water to a boil. When the water is boiling vigorously, carefully add the udon strips, allowing them to boil for 25-30 minutes. It is important to add a little cold water each time the water begins to boil again, to maintain a consistent temperature. Check the udon by cutting a strip; when the center changes from white to gray, it is a sign that the udon is ready. Once cooked, drain it well and rinse it under cold running water to stop the cooking process.
