Noodles are a versatile and delicious dish, ideal for being enjoyed in various combinations. We start by preparing the noodles. In a large bowl, we combine fresh eggs with flour, ensuring we mix very well to obtain a uniform composition. It is important that the flour is of good quality, as this will influence the final texture of the noodles. Once we have obtained a homogeneous dough, we start kneading. Kneading is essential for gluten development, which will make the noodles more elastic and tastier. We continue to knead the dough for about 10 minutes until it becomes smooth and elastic.

After kneading, we wrap the dough in cling film and let it rest in the refrigerator for 10 minutes. This step helps relax the gluten, making it easier to roll out later. In the meantime, we prepare the sauce. The white sauce is a perfect choice to accompany the noodles, and its preparation is extremely simple. In a heatproof container, we add good quality chocolate and liquid cream, making sure the cream has a fat content of 35% to achieve a rich texture. We place the container over a double boiler, avoiding direct contact with the hot water to prevent burning the chocolate. We stir constantly until the chocolate completely melts and combines with the cream, resulting in a smooth and creamy sauce.

Once the dough has rested in the refrigerator, we take it out and roll it out on a well-floured surface. Using a rolling pin, we roll the dough into a thin sheet, being careful not to stick. Then, we cut the noodles into the desired shape, whether they are thin strips or squares, depending on preference. We boil the noodles in salted water for 2-3 minutes until they become al dente. Once ready, we drain them and place them on a platter.

Now it is time to serve the dish. We pour the chocolate sauce over the steaming noodles and add poppy seeds, which will provide a crunchy note and an unusual taste. We also remember to add grated lemon zest, which will add a fresh aroma and a touch of acidity, balancing the sweetness of the sauce. The noodles with white sauce are served immediately to be enjoyed warm. This delicious combination will delight any gourmet, turning an ordinary meal into an unforgettable culinary experience.
