Stuffed peppers with sour cream sauce

Meat - Stuffed peppers with sour cream sauce by Tudora N. - Recipia

Stuffed peppers with sour cream sauce are baked with a filling of meat, rice and smoked pork ribs. The meat and rice make a soft filling, while the sour cream and garlic come together into a sauce that the liquid in the pot loosens. I prefer the sauce mixed with the peppers’ cooking liquid, rather than spooned separately over each serving. Prep: 35 minutes. Cook: 105 minutes. Rest: 15 minutes. Total time: 155 minutes. Serves: 8. Approximately 500 kcal and 20 g protein per serving.

Ingredients

  • 9 medium peppers
  • 500 g mixed ground meat or ground pork
  • 250 g rice
  • 2 medium onions (300 g)
  • 1 medium red pepper (150 g)
  • 30 ml oil
  • 15 g parsley
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 200 g smoked pork ribs
  • 500 ml water
  • 3 garlic cloves
  • 5 ml oil
  • 300 g sour cream with at least 20% fat
  • 50 g butter
  • 8 g flour

Preparation

1. Take the sour cream out of the fridge 15 minutes before you make the sauce. Cut off the tops of the peppers or remove their stems, then scoop out the seeds and ribs. 2. Chop the onions and red pepper. Heat 30 ml of oil in a pan and sauté them for 3 minutes, until slightly softened. Add the rice and sauté for another 3 minutes, until translucent. 3. Add the mixture to the ground meat, then add the chopped parsley, 1 teaspoon of salt and 1/2 teaspoon of pepper. Mix well. 4. Fill the peppers without packing the mixture right up to the top. Arrange them upright or on their sides in an ovenproof pot, among the pieces of smoked pork ribs. 5. Pour 500 ml of water into the pot and cover it. Put the pot in an oven preheated to 180°C for 90 minutes, until the peppers have softened and the rice and meat are cooked. 6. Chop the garlic. Heat 5 ml of oil in a clean small saucepan and sauté it for 2 minutes, until fragrant. 7. Coat the butter in flour and add it to the saucepan with the sour cream. Stir the sauce gently and let it simmer for 5 minutes. Take a few spoonfuls of hot sauce and gradually stir them into the saucepan. 8. Pour the sauce over the peppers and mix it with the liquid in the pot. Let everything simmer gently for another 2 minutes.

Notes

With polenta, some of the sauce ends up on the plate too. Leftovers keep in the fridge for up to 3 days; you can make the filling a day ahead and keep it covered in the fridge. You can replace the smoked pork ribs with 200 g of smoked pork belly; the sour cream and butter contain dairy, and the flour contains gluten. Choose firm peppers with wide bases so they stand upright in the pot. Smaller ones sometimes soften faster, so check them after 75 minutes. I get everything ready ahead of time, so I can put the pot in the oven without rushing before the meal. When filling the peppers, leave a little room below the rim; that takes more time than you’d think when you have a lot to do.

Frequently asked questions

Why do the peppers split while baking?

Usually, they’ve been packed too tightly. Leave about 1 cm free at the top so the filling has room.

Can I use only pork?

Yes, you can use 500 g of ground pork shoulder instead of the meat mixture.

What should I do if the rice is still hard?

Pour 100 ml of hot water into the pot, put the lid back on and bake the peppers for another 15 minutes.

How can I thin the sauce if it has thickened too much?

Stir in 2 tablespoons of the liquid from the pot at a time until it reaches the consistency you want.

Can I use beef in the filling?

Yes, replace the mixed meat with 500 g of ground beef and keep the same amounts for the other ingredients.
