To prepare delicious and crispy chicken wings, we start by cutting off the tips, which are not needed in our recipe. Then, we separate the drumette from the flat part of the wings, thus obtaining two distinct components that will cook evenly. After we finish separating all the wings, we transfer them to a large pot. Here, we add salt, pepper, olive oil, and hot sauce to give them a spicy and flavorful taste. We mix the ingredients well, ensuring that each wing is evenly coated with spices and oil.

After this step, we transfer the wings to a sturdy plastic bag and add the flour. We seal the bag tightly and shake vigorously so that the flour coats all the wings, providing a delicious crust after baking. We then prepare a tray which we cover with aluminum foil – it is essential to have two trays to cook all the wings at once or, alternatively, to bake them in two rounds. We place the wings on the tray, leaving a small space between them to allow warm air circulation, which will help achieve a crispy texture.

The oven should be preheated to 200 degrees Celsius (gas mark 6). Once it reaches the desired temperature, we place the trays in the oven, then reduce the temperature to 190 degrees Celsius (gas mark 5) and let the wings bake for 30 minutes. After this period, we take the trays out of the oven and turn the wings to brown evenly on both sides. We leave them in the oven for another 30 minutes, during which the enticing aroma will fill the entire kitchen.

In the meantime, we prepare the sauce. In a saucepan, we add finely chopped garlic, grated ginger, sugar, soy sauce, vinegar, and chili sauce. We mix on low heat, being careful to stir constantly to prevent burning, until the sugar is completely dissolved. It is important not to let the sauce come to a boil, as we want a smooth and flavorful consistency.

When the wings are ready and have a golden color, we take them out of the oven and transfer them to a large bowl. We pour the delicious sauce prepared earlier over the hot wings and carefully mix, ensuring that each piece is well coated. These chicken wings, with a crispy texture and spicy taste, will surely be the stars of the meal. Serve them hot, alongside your favorite sides or with an additional sauce of your choice.  Ingredients: 2.5 kg wings, 5 tablespoons hot sauce (I used Frank's Hot Sauce but spicy ketchup can also be used), 2 tablespoons olive oil, 2 cups all-purpose flour, 1/2 teaspoon salt, 1/2 teaspoon pepper, 4 cloves finely grated garlic, 2 tablespoons finely grated ginger, 1/2 cup packed brown sugar, 1 tablespoon soy sauce, 1 tablespoon Sambal Oelek chili sauce or 1/2 teaspoon dried chili pepper, 1/2 cup balsamic vinegar or 1/4 cup white wine vinegar (6% acidity)
