Lamb drob with mixed minced meat

Lamb drob with mixed minced meat is a Romanian offal and meat loaf that goes on the Sunday table, sliced. It is made from lamb offal, pork and beef. The result is a compact mixture with pieces of offal visible among the meat and golden sesame on top. I like to chop the offal finely but not mash it, so it can be felt in the slice. Preparation: 25 minutes. Cooking: 91 minutes. Total time: 116 minutes. Servings: 6. About 550 kcal and 50 g protein per serving.
Ingredients
- 1 kg lamb offal
- 1 tablespoon salt
- 2000 ml water
- 500 g mixed minced meat (pork and beef)
- 2 bunches spring onions
- 4-5 garlic cloves
- 3 lovage leaves
- 4 eggs
- 1 medium onion (150 g)
- 3 tablespoons oil
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 teaspoon ground ginger
- 1 teaspoon smoked paprika
- 2 tablespoons sesame seeds
Preparation
1. The lamb offal is trimmed of fat and dried with kitchen paper. It goes into a large pot with 2000 ml water and 1 tablespoon salt, and is boiled for 40-50 minutes, until softened. 2. Let it cool, then cut into small pieces. 3. The spring onion, garlic and lovage leaves are washed well, dried and chopped as finely as possible. 4. The dry onion is finely chopped and softened over medium heat in 2 tablespoons oil, in a fairly large pan, until soft, about 6 minutes. 5. Add the chopped offal, 1/2 teaspoon salt, 1/2 teaspoon ground pepper, 1 teaspoon ground ginger and 1 teaspoon smoked paprika. Stir now and then and leave on the heat for 5 minutes. 6. In a bowl put the minced meat, the onion cooked with the offal, the spring onion, garlic, lovage and the 4 eggs. Mix well, then taste and add the remaining 1/2 teaspoon salt if needed. 7. Line a tin with baking paper, grease the paper with 1 tablespoon oil, add the mixture and level it. 8. Put the tin into the oven preheated to 180 degrees C for 20 minutes. Sprinkle the sesame seeds on top and bake 15 minutes more, until browned on top.
Notes
The drob goes well with pickles, radishes and fresh bread, just like at the Sunday table. It has no flour, so it is gluten-free, but it contains eggs and sesame, so keep allergies in mind. The offal must be boiled until it is well softened, otherwise the slice will be tough in the middle. If the layer in the tin is thicker, the drob needs more time in the oven. If the sesame browns too fast, cover the tin with aluminium foil. The drob can break when cut if it is cut warm, so let it cool well in the tin. If you prepare it in the morning, the baking finishes well before the meal. It keeps wrapped in the fridge for up to 3 days.
Frequently asked questions
Can I make the drob with pork only, without beef?
Yes, 500 g minced pork takes the place of the mixed meat, and the drob comes out a bit fattier.
What can I replace the sesame seeds with?
With 2 tablespoons sunflower seeds, sprinkled the same way, before the oven.
Which tin is better, the rectangular one or the cake tin?
The rectangular tin gives more even slices, and the cake tin gives a taller, more compact drob.
