To prepare a delight from chicken thighs, we start with an essential step: boiling the thighs. So, we take a large pot and add enough water to cover the thighs. In the water, we add salt, a few peppercorns, some crushed garlic cloves, and a bay leaf. These aromatic ingredients will give a special flavor to the meat. We let the thighs boil over medium heat until they become tender and juicy, about 30-40 minutes. After boiling, we remove the thighs from the water and let them cool. Then, carefully, we remove the skin from them, resulting in lighter and healthier meat.

To prepare the marinade, we focus on strong and spicy flavors. We take a few hot peppers, slicing them thinly. If using jarred hot peppers, make sure they are well-drained from vinegar. In a bowl, we mix the slices of hot pepper with olive oil, honey, freshly ground pepper, salt, and a little vinegar. This combination will give an intense flavor to the thighs and make them truly delicious.

After making the marinade, we take the skinless thighs and roll them in this mixture, ensuring they are well coated on all sides. We place the thighs in a container and pour the remaining marinade over them. We cover the container and let the thighs marinate in the refrigerator for 1-2 hours. This step is crucial, as the flavors will deeply penetrate the meat, giving it a special taste.

Finally, we prepare the thighs for frying. We take each thigh out of the marinade, letting the excess drip off. We need to prepare a coating mixture: flour, beaten egg, and optionally, coconut flakes or sesame seeds, depending on preferences. We dip the thighs in flour, then in egg, and finally in the coconut flakes or sesame, ensuring they are well coated.

In a deep skillet, we heat plenty of oil for frying. When the oil is hot, we add the thighs, frying them until they become golden and crispy. These chicken thighs will be flavorful, with a delicious crust and a juicy interior. Served hot, alongside a fresh salad or yogurt sauce, these thighs will surely be the stars of your meal!
