Chickpea flour is a versatile and nutritious ingredient, perfect for creating a delicious dough for savory pies or pancakes. The first step in preparing this dough is mixing the chickpea flour with water. It is essential to use a whisk to achieve a smooth mixture without lumps. This mixing process is crucial, as a uniform texture will contribute to an even baking of the pie. Once we have obtained a liquid dough, we let it rest in the fridge for at least an hour. The longer we let the dough sit, the easier it becomes to digest. For example, letting it sit overnight significantly improves the flavor and consistency.

An interesting trick is to add a sprig of rosemary to the dough. This will infuse a subtle fragrance, but before pouring the dough into the pan, don’t forget to remove the rosemary sprig. This way, you will achieve an aromatic accent without having rosemary needles in the pie. During preparation, it is important to scoop off the foam that forms on the surface of the dough with a spoon and discard it, as it can affect the final texture.

Next, we preheat the oven to 220 °C. It is good to know that traditionally, this type of pie is baked in a wood-fired oven, which gives it a special taste. Meanwhile, we prepare the pan we will use. It is recommended to use a copper pan, which heats up quickly and evenly. We pour oil into the pan, covering the bottom with about 2 mm of oil. After mixing the dough again, ensuring that the ingredients are well incorporated, we carefully pour it into the oiled pan.

For an extra flavor, in the version with green onions, we sprinkle finely chopped green onions on top of the dough. We bake the pie for 40-50 minutes, then to achieve a crispy crust, we activate the grill function for a few minutes. It is important that the layer of dough is not too thick; ideally, it should be a maximum of 5 mm. For the amount of dough mentioned, a pan measuring 29 cm x 39 cm is perfect. It is essential to adjust the proportions of the ingredients according to the size of the pan you have at home, so you can achieve a perfectly baked pie with a light texture and savory taste. In the end, you will obtain a delicacy that not only impresses with its appearance but is also a healthy and nutritious choice.
