Rice Pilaf - Ludaskasa
To prepare a delicious dish, we will start by ensuring that we have all the necessary ingredients at hand. Onions and peppers are the basic ingredients that will add flavor to our meal. We chop the onion into small cubes, and the peppers, depending on preferences, can be cut into cubes or slices. We heat a deep frying pan or pot over medium heat and add the oil. Once the oil is sufficiently heated, we add the onion and peppers and sauté the vegetables for about 5-7 minutes, until the onion becomes translucent and the peppers soften.
After the vegetables are ready, we add the meat cut into suitable pieces. Whether you use chicken, pork, or beef, it is important to salt and pepper them to taste. We mix well to combine the flavors, and the meat will brown slightly. At this point, we take care of the tomatoes; we peel them carefully, either by the classic method or by dipping them in hot water for a few seconds, then we cut them into cubes or slices, depending on personal preferences. We add the tomatoes to the meat and mix everything, letting it simmer together for 2-3 minutes.
The next step is to add the pepper paste or paprika, which will give our dish a vibrant color and intense flavor. We cover the meat with water, ensuring it is well submerged, then cover the pot with a lid and let it boil. It is important to mention that, in the case of pork, it will be necessary to add water several times to ensure it cooks evenly.
After the meat has cooked for half the time, we add the rice. It is good to choose a rice that cooks quickly, such as basmati or long-grain rice. We mix everything well and let it boil together. At this moment, we also add finely chopped parsley, which will bring a special freshness to the dish. We continue to monitor the dish, stirring occasionally, until the rice is cooked more than halfway.
When the rice is almost cooked, we cover the pot with a lid and turn off the heat, letting the dish sit for about 15 minutes. This is an excellent technique, as the rice will absorb the remaining water, becoming fluffy and aromatic. In the end, we serve the dish warm, alongside pickles, which will perfectly complement the flavor. This recipe is not only easy to prepare but promises to become a family favorite due to its rich flavors and pleasant texture!
