To prepare a delicious recipe for potato balls, we start by boiling the potatoes with their skins on, to retain the nutrients and flavor. Once they are boiled, we let them cool slightly, then carefully peel them. Using a fork, we mash the potatoes until we obtain a homogeneous mixture, or for a finer result, we can use a meat grinder.

In the bowl with the mashed potatoes, we add the beaten eggs as a binder to make the balls fluffier. Grated cheese will add a delicious flavor, so do not hesitate to use good quality cheese. Chop fresh herbs, such as dill or parsley, and mix them into the mixture. This ingredient will give an irresistible aroma. Add two tablespoons of oil to improve the texture and facilitate shaping the balls. Don’t forget to season with salt and pepper to taste, to enhance the flavors.

After obtaining a uniform mixture, we wet our hands to shape the balls to the desired size. We place these balls in a heat-resistant dish, which we have previously greased with oil, to prevent sticking. We preheat the oven to a medium temperature and place the dish inside, letting them bake until they acquire a lightly browned crust, a sign that they are ready.

Meanwhile, we prepare the sauce. In a pan, we sauté a little flour in a tablespoon of hot oil, stirring constantly to avoid lumps. After a few minutes, we extinguish the flour with the broth diluted in a cup of water. We add a tablespoon of sugar to balance the acidity of the broth and let the sauce simmer over medium heat, stirring occasionally, until it becomes slightly thicker.

Once the potato balls are browned, we take them out of the oven and pour the hot sauce over them, ensuring they are evenly covered. We sprinkle the remaining cheese on top and return them to the oven, letting them gratin for 5-10 minutes, until the cheese becomes golden and delicious.

To serve, we carefully take the potato balls out of the oven and place them on plates. We sprinkle a little chopped herbs on top for an extra touch of color and flavor. These potato balls are perfectly warm, crispy on the outside and soft on the inside, making them ideal for a savory dinner or as an appetizer at a party. Enjoy your meal!
