Pork Rolls with Filling and Potatoes, Baked
To prepare the delicious stuffed meat rolls, we start by preparing the necessary ingredients. The first step is to take the slices of meat, which we will pound with a meat mallet to make them more tender and easy to roll. It is essential to achieve an even thickness so that the rolls cook uniformly. After we finish pounding the meat, we will season it with salt and pepper to taste, to give it a pleasant flavor.
We continue by preparing the filling. On each slice of meat, at one edge, we will place a stick of cheese, surrounded by thin slices of red pepper, which will add not only flavor but also a note of vibrant color. Now, carefully, we roll the meat over the filling, ensuring that everything is well wrapped. To keep the rolls in shape, we will wrap them in two slices of bacon, which will add a rich flavor and an appetizing appearance. If necessary, we can secure the ends of the rolls with toothpicks to prevent them from unraveling during baking. Once all the rolls are ready, we place them in a heat-resistant dish and drizzle them with melted butter or oil, to give them a crispy crust.
For the side of baked potatoes, we peel the potatoes and slice them thinly, but not completely. We leave an uncut portion so that the slices stay together. A useful trick is to use the handles of two wooden spoons, which we place on either side of the potato to prevent cutting all the way through. After we have obtained the slices, we carefully open them and place sliced mushrooms between them, adding a little grated parmesan for extra flavor. We arrange the potatoes in the heat-resistant dish, interspersing them with the meat rolls, sprinkle with salt, and drizzle with melted butter.
After we have prepared everything, we place the dish in the preheated oven at 180 degrees Celsius for about 30-40 minutes, or until the meat and bacon are nicely browned, and the potatoes are well cooked (a simple test is to poke them with a fork). Ten minutes before the end of baking, we take the dish out of the oven, sprinkle the potatoes with fresh herbs, and add grated cheese or cheese on top. We put the dish back in the oven until the cheese is melted and golden.
Finally, we serve the dish warm, sprinkled with fresh parsley, portioning on the plate alongside the meat roll and 1-2 potatoes, to delight both the eyes and taste buds of our loved ones. This is a perfect recipe for a special dinner, full of flavors and savory textures.
