Pea Stew with Pork
A delicious dish that catches my eye every time I prepare it is this simple and tasty recipe. I start by washing the pork meat well, which I usually choose because it is juicy and pairs perfectly with the vegetables. After cleaning the meat, I cut it into medium-sized pieces so that it cooks evenly. At the same time, I prepare the vegetables: carrots and onion. I carefully peel the carrot, then wash it well and cut it into small cubes. The onion, in turn, will contribute its flavor, and I cut it into cubes.
After I have finished preparing all the ingredients, I take a pressure cooker and add the meat and chopped vegetables. I add a pinch of salt, a bay leaf to enhance the flavors, and enough water to cover the ingredients well. I close the lid of the pot and let everything boil over medium heat for 20 minutes, during which the delicious aroma will spread throughout the kitchen. After this time, I turn off the heat and wait a few moments for the pot to cool down so that I can safely open the lid.
Once I have opened the pot, I carefully transfer the meat and vegetables to a saucepan, where I will add the peas, which are an essential ingredient to give the dish a pleasant texture. I let everything simmer on low heat until the peas are well cooked, and the colors of the ingredients become vibrant. After the peas are ready, I add tomato juice, which will give a sweet and sour taste, and pepper paste for a slightly spicy note.
To thicken the sauce, I dissolve a tablespoon of flour in water and carefully add it to the saucepan, stirring constantly to prevent lumps from forming. I season with paprika, salt, and pepper to taste. I let everything boil a few times so that the flavors blend perfectly. In the end, before serving, I add freshly chopped dill, which will give the dish a touch of freshness and an attractive appearance.
