The meat is boiled for 2-3 hours over medium heat or, for a quicker method, about 40 minutes in a pressure cooker. While the meat is cooking, you can prepare the other ingredients. Add a large onion, finely chopped, and a peeled carrot cut into rounds to the pot. These vegetables will not only enhance the flavor of the meat but will also contribute to the flavors of the final sauce. Once the meat is well boiled and tender, remove it from the pot and let it cool slightly. Then, using your hands, shred the meat into thin strips, being careful not to crumble it too much to maintain the texture.

Meanwhile, you can start preparing the sauce. In a large skillet, add a little oil and sauté the finely chopped onion until it becomes glassy and slightly golden. This will form the flavorful base of the sauce, and to intensify the flavor, add a tablespoon of vinegar which will provide a pleasant contrast.
