The meat is carefully washed under a stream of cold water, ensuring that we remove any impurities. After thoroughly cleaning the meat, we dry it carefully using paper towels to eliminate excess water. Now it is time to season it, using salt, pepper, and, if desired, various herbs like thyme or rosemary to give it an intense flavor. We place the meat in a pan where we have heated oil over medium heat, making sure it is hot enough to create a delicious crust. It is important to turn the meat on all sides so that it browns evenly and develops an appetizing golden color. After achieving a nice crust, we remove the pan from the heat and let the meat rest for a few minutes. This step is essential, as the meat will release juices, enhancing the dish's flavor.
While the meat is resting, we take care of the garlic, which we peel and leave whole or crush lightly, depending on preferences. We place the garlic in the pan and cover it with water until it is an inch above the ingredients. The reaction between the garlic and water will give a savory taste to the dish. We bring the pan back to the heat, covering it with a lid, and let it simmer gently. It is important to monitor it closely so that the water evaporates gradually, and the meat becomes tender and juicy. When the water has evaporated almost completely, we prepare to add the vegetables.
We peel the tomatoes and then cut them into cubes, just like we do with the onion. These vegetables will add extra flavor to the dish, so we place them over the meat and season with salt and pepper to taste. We gently mix everything so that the meat absorbs the flavors of the vegetables. We let it cook for a few more minutes until the vegetables soften and their aroma perfectly blends with that of the meat. Finally, we add the finely chopped dill, which will add a fresh and fragrant taste. We cover the pan and let the dish rest for a few minutes before serving.
