Chocolate cookies

Dessert - Chocolate cookies by Steliana M. - Recipia

Chocolate cookies with cornstarch bake in about 8 minutes and come out tender, just right in the morning with coffee. The butter, sugar and egg dough is portioned out by the teaspoon, and the dark chocolate pieces stay scattered throughout the cookies. I usually serve them with coffee while they're still fresh and just cooled. Prep: 15 minutes. Cook: 8 minutes. Rest: 20 minutes. Total: 43 minutes. Servings: 30. About 120 kcal and 2 g protein per serving.

Ingredients

  • 200 g cornstarch
  • 100 g flour
  • 120 g butter
  • 200 g sugar
  • 1 egg
  • 3 egg yolks
  • 1 sachet baking powder (10 g)
  • 1/4 teaspoon baking soda
  • 120 g dark chocolate chips

Preparation

1. Cream the butter and sugar until smooth. 2. Add the whole egg, then the 3 yolks, one at a time, mixing after each addition. 3. In a separate bowl, mix the cornstarch, flour, baking powder and baking soda. 4. Mix the dry ingredients into the butter and egg mixture, then add the chocolate chips. 5. Line the baking tray with parchment paper. Scoop up the dough with a teaspoon and place portions on the tray, then bake at 180°C for about 8 minutes, until golden. 6. Take the cookies out of the oven and leave them to cool for 20 minutes, then put them in a tightly sealed jar.

Notes

The teaspoon-sized portions are small and bake in about 8 minutes; if you make them bigger, watch the edges and give them a little longer. I chose dark chocolate because the dough already has a lot of sugar; with white or milk chocolate, reduce the sugar to 150 g. Don't rush the cooling: while they're hot, the cookies are soft and can break when you lift them. Sometimes the dough seems soft after mixing, but the flour and cornstarch bind it as they're worked in. Once cooled, I keep them in a tightly sealed jar. They contain gluten, dairy and eggs, so they're not suitable for people who avoid them. I put them on a plate beside my morning coffee.

Frequently asked questions

Can I use a chocolate bar instead of chocolate chips?

Yes. Chop it into pieces about 5 mm in size so they're easy to distribute through the dough.

Why did they spread too much while baking?

Melted butter can make the dough too soft. Chill it in the fridge for 25 minutes before shaping the portions.

What should I do if the cookies come out too dry?

Check them after 8 minutes; if you leave them in the oven for more than 10 minutes, they can dry out quickly.

Can I make the dough a day ahead?

Yes, keep it covered in the fridge for up to 24 hours and leave it on the counter for 15 minutes before portioning.
