Caramelized walnut and hazelnut bars

Caramelized walnut and hazelnut bars set into a crisp layer when the sugar and water turn amber, then are cut into bars with pieces of walnut and hazelnut. I chop the nuts into uneven pieces, not too fine, and make sure no hazelnuts are left whole; I like each bar to have pieces of different sizes, not just smooth caramel. Preparation: 5 minutes. Cooking: 8 minutes. Total time: 13 minutes. Servings: 8. About 155 kcal and 2 g protein per serving.
Ingredients
- 150 g sugar
- 2 tablespoons water
- 50 g walnuts
- 50 g hazelnuts
Preparation
1. Chop the walnuts and hazelnuts for 3 minutes, into uneven pieces. 2. Put the sugar and water in a saucepan over medium heat. Stir for 8 minutes, until the caramel turns amber. 3. Add the walnuts and hazelnuts, stir, then take the pan off the heat. Pour the mixture onto a wooden cutting board and cut it into bars with a knife dipped in cold water, while the mixture is still pliable.
Notes
I serve them alongside black coffee, in small pieces. Once cool, keep them in a closed container in a dry place; moisture softens the sugar and makes the pieces stick together. Choose walnuts and hazelnuts with a clean smell, without any hint of stale oil, which you can still notice even when they’re coated in caramel. Very finely chopped nuts blend in almost completely, while larger pieces stay distinct when you chew. If you want just one kind of nut, use 100 g of walnuts instead of the mix. This dessert contains walnuts and hazelnuts, tree nut allergens.
Frequently asked questions
Can I use pecans instead of hazelnuts?
Yes, use 50 g of pecans instead of the 50 g of hazelnuts and chop them before stirring them into the caramel.
What should I do if the sugar hardens in the pan before I pour out the mixture?
Put the pan over low heat for another 20 seconds, stirring, until the caramel softens again.
Can the bars be cut after they have cooled completely?
The caramel will be hard and may crumble when cut. Leave the mixture for 2 minutes after pouring it out, then cut the bars while it is still pliable.
