Caramelized sugar and sour cherry cake

Caramelized sugar and sour cherry cake bakes at 180°C, with the fruit arranged on top of the batter. The caramelized sugar colors the crumb, while cinnamon and cloves bring winter cakes to mind; the sour cherries and breadcrumbs make each bite a little different. I go for the corner pieces, where the cherries meet the edge of the cake. Preparation: 25 minutes. Baking: 47 minutes. Resting: 20 minutes. Total time: 92 minutes. Servings: 15. About 190 kcal and 4 g protein per serving.
Ingredients
- 100 g sugar
- 200 ml water
- 4 eggs
- 200 g sugar
- 2 sachets vanilla sugar
- 1 small pinch ground cloves
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 tablespoon lemon juice or vinegar
- 280 g flour
- 2 tablespoons breadcrumbs
- 350 g pitted sour cherries
- 20 g vanilla-flavored powdered sugar
Preparation
1. Put 100 g sugar in a saucepan and caramelize over medium heat for 4 minutes, until amber-colored. Carefully pour in 200 ml water and boil for 3 more minutes, until the caramel dissolves, then leave the syrup to cool for 20 minutes. 2. Heat the oven to 180°C. Separate the eggs and beat the yolks with 200 g sugar and the 2 sachets of vanilla sugar until the mixture is pale and thick. 3. Add the cloves and cinnamon. Dissolve the baking soda with the lemon juice or vinegar and mix it in, then pour in the cooled syrup and gradually add the flour. 4. Beat the egg whites until stiff and fold them in with a spatula, using an upward motion, until no white streaks remain. 5. Line a 35 × 45 cm baking pan with parchment paper. Pour the batter into the pan. Drain the sour cherries, mix them with the breadcrumbs and arrange them on top. 6. Bake for 35-40 minutes, until the cake is golden and a toothpick comes out clean. Dust it with vanilla-flavored powdered sugar.
Notes
Keep the cake covered at room temperature for up to 3 days; you can bake it a day ahead. I serve it with a cup of black tea, which goes well with the clove flavor. The recipe makes enough for a 35 × 45 cm pan, so in a smaller pan the batter will be thicker and may need more time in the oven. Drain the sour cherries from the jar well, or the remaining liquid will soften the breadcrumbs and make the surrounding batter wet. Pitted fresh sour cherries can replace the jarred ones in the same quantity. The crumb can turn gummy if the sugar syrup goes into the batter while still warm, so let it cool before using it. I bake it a few hours before the meal, so it has time to cool and can be cut without crumbling. The cake contains gluten and eggs.
Frequently asked questions
Can I use frozen sour cherries?
Yes. Thaw 350 g sour cherries in a sieve for one hour, then drain off the liquid before mixing them with the breadcrumbs.
Why did the cake sink in the middle?
The egg whites can deflate if they are folded in too quickly or if you open the oven early. Keep the temperature at 180°C and do not open the door during the first 25 minutes.
Can I replace the baking soda with baking powder?
Yes, use 3 teaspoons of baking powder instead of the teaspoon of baking soda. The lemon juice or vinegar is no longer needed for leavening.
How can I tell if it is baked through in the middle?
Insert a toothpick in the middle after 35 minutes. If it comes out with wet batter on it, leave the cake in the oven for 5 more minutes at a time and check again.
