Delicious Berry Tart: A Simple and Creamy Recipe

Welcome to the wonderful world of tarts! Today, I’ll share with you the recipe for a delicious berry tart that not only looks spectacular but also has a taste that will turn any meal into a special moment. This creamy tart, with a crunchy base and a vibrant fruit topping, is perfect for enjoying with loved ones. Let’s see how to make it!

Preparation time: 30 minutes
Baking time: 30 minutes
Total time: 1 hour
Servings: 8

Ingredients

For the crust:
- 2 eggs
- 300 g flour
- 120 g butter (you can use a combination of butter and margarine, as I did)
- 120 g sugar
- 1/2 packet baking powder

For the cream:
- 1 packet vanilla pudding (80 g)
- 1 packet vanilla sugar
- 4 tbsp sugar
- 400 ml milk
- 200 g ricotta

For the topping:
- 300 g berries (fresh or frozen)
- 6 tbsp sugar
- 200 ml juice from the berries
- 4 tbsp sugar
- 1 packet gelatin

Instructions

1. Prepare the berries. Start by draining the excess juice from the berries. This juice (about 200 ml) will be used later to make the jelly. Place the berries in a saucepan with 6 tablespoons of sugar and cook over medium heat for about 10 minutes, until thickened and resembling jam. Once cooked, let them cool.

2. Make the crust. In a large bowl, mix the flour with the baking powder. In the center, add the eggs, sugar, and softened butter. Use a spatula or mixer to combine the ingredients until you get a soft and homogeneous dough. If you wish, you can experiment with coconut oil or margarine for a healthier option.

3. Bake the crust. Grease a tart pan with butter and dust it with flour. Press the dough into the pan with your hands, ensuring it covers the sides as well. It’s important to prick the crust with a fork to prevent air bubbles during baking. Bake the crust in a preheated oven at 200 degrees Celsius for 10 minutes, then reduce the temperature to 180 degrees for another 10 minutes and to 170 degrees for the last 10 minutes. When done, remove the crust from the oven and let it cool.

4. Prepare the cream. While the crust is cooling, prepare the pudding according to the package instructions, using 400 ml of milk and 4 tablespoons of sugar. Once the pudding is ready, let it cool completely. After it has cooled, mix it with the ricotta until you achieve a creamy and smooth mixture.

5. Assemble the tart. On the cooled crust, spread the vanilla and ricotta cream in an even layer. Then, carefully add the cooled berries, covering the entire surface of the tart.

6. Make the jelly. In the berry juice, dissolve the packet of gelatin and add 4 tablespoons of sugar. Heat the mixture until it starts to boil, then let it boil for one minute. Turn off the heat and let the jelly cool for a minute, stirring constantly to avoid bubbles. When it’s still slightly warm, carefully pour it over the filled tart, ensuring you cover the entire surface.

7. Chill and serve. Let the tart chill in the fridge for at least an hour before serving. This way, the jelly will set, and the flavors will meld perfectly. When ready, cut the tart into slices and enjoy every bite!

Helpful tips

- If you’re using frozen berries, make sure to thaw and drain them well before using.
- You can experiment with different types of cheese for the cream, such as mascarpone, for a different texture and flavor.
- If desired, you can add some chopped nuts or chocolate chips to the ricotta cream for an extra flavor boost.

Nutritional benefits

This tart is not only delicious but also healthy. Berries are rich in antioxidants, vitamins, and minerals, while ricotta is a good source of protein. Additionally, whole wheat flour can be used instead of white flour for a more nutritious option.

Frequently asked questions

1. Can I use other fruits?
Yes, this recipe is versatile! You can substitute the berries with peaches, apples, or even pineapple.

2. How can I make the tart less sweet?
Reduce the amount of sugar in the recipe, especially in the ricotta cream and jelly.

3. Can it be made in advance?
Absolutely! The tart keeps well in the fridge for 2-3 days.
