Sweet Cheese Rolled Pie
The dough is the cornerstone of many delicious dishes, and this recipe is no exception. We start by sifting the flour into a deep bowl, making sure to remove any impurities or lumps. We make a well in the center of the flour, a sort of crater where we will add the yeast. It needs to be well activated, so we will soak it with two tablespoons of sugar and 100 ml of warm milk. After combining these ingredients, we let the mixture sit for about half an hour, during which the yeast will start doing its job and fermenting, increasing its volume.
Once the yeast has risen, we add the two eggs, 150 grams of sugar, a pinch of salt, and the grated lemon zest to the bowl, which will bring an unmistakable aroma to our preparation. We begin to knead the dough gently, gradually adding the warm milk and mineral water until the dough becomes elastic and pulls away from our hands. Finally, we add the melted margarine, which will give the dough a fluffy texture and a perfect flavor. After kneading well, we cover the dough with a clean towel and let it rise in a warm place until it doubles in volume.
In the meantime, we take care of the filling, which is essential to add an extra taste to our dish. In a bowl, we mix the cottage cheese with 100 grams of sugar, one egg, raisins, lemon zest, vanilla essence, and vanilla sugar. We add a little lemon juice to balance the sweetness and intensify the flavors.
Once the dough has risen sufficiently, we take it and roll it out on an oiled surface using a rolling pin. We spread the cheese filling evenly over the dough and carefully roll everything tightly, forming a cylinder. We will twist this cylinder into the shape of a snail, which will not only look good but will also have an attractive appearance after baking.
After we finish shaping, we brush the snail with an egg yolk, which will give it a golden hue at the end. We preheat the oven to medium heat and bake the snail for 40-45 minutes. When it's done, we carefully take the snail out of the oven and brush it with a syrup made of water and sugar, which will add an appetizing shine and extra sweetness. Enjoy your meal!
