Snails with Blueberries and Mascarpone
Prepare a starter with yeast, sugar, warm water and let it rise for 15 minutes. This is an essential step, as the activated starter will give the dough a fluffy and airy texture. In another bowl, mix the salt, honey, and butter into the warm milk, stirring continuously until the butter is completely melted and the ingredients are well incorporated. This mixture will add a delicious flavor and optimal moisture to the dough.
Once the starter has risen, pour the warm milk mixture over the sifted flour, adding the activated starter as well. Knead the dough carefully until it pulls away from the bowl and your hands. It is important not to rush this process; the dough should become elastic and smooth. Transfer it to a work surface and continue kneading for at least 10 minutes, being careful to add very little flour or milk, depending on the consistency of the dough. Once you have achieved an elastic dough, let it rise in a ball shape, in a covered bowl, for about 1 - 1 1/2 hours, until it doubles in volume.
After the dough has risen, roll out a rectangular sheet of dough, being careful not to make it too thin. Spread the surface with a delicious cream made from mascarpone mixed with sugar and almond essence, which will add a refined note of flavor. Sprinkle fresh blueberries over the entire surface, bringing a beautiful contrast of color and a sweet-tart taste.
Carefully roll the dough, forming a tight roll, then cut into appropriately sized segments. Place these rolls upright, spaced apart, in a 28 cm diameter cake tin lined with baking paper. Let them rise again for 20-30 minutes, to achieve a fluffy and airy texture.
Before placing the tin in the oven, brush the rolls with a mixture made from a lightly beaten egg and a tablespoon of sour cream or yogurt, to achieve a golden and appetizing crust. Preheat the oven and bake for 20-25 minutes at 170 degrees Celsius, or until the rolls are well baked and nicely browned. Once ready, remove them from the tin and glaze them while still warm with a mixture of powdered sugar mixed with a tablespoon of thick cream. For a final touch, decorate with fresh blueberries and allow to cool completely. These fluffy and aromatic rolls will be a true delight for the taste buds!
