To prepare these wonderful nut shells, we need to focus on two essential stages: preparing the dough and the cream. We start with the dough, the basic ingredients being lard, flour, eggs, powdered sugar, and ammonia. In a large bowl, we mix the soft lard with the flour until we obtain a homogeneous composition. Then, in another container, we beat the eggs with the powdered sugar and the ammonia extinguished in a little vinegar or lemon juice, so that it becomes a fluffy foam. This stage is essential to achieve a fine texture of the shells.
After the eggs have been well beaten, we gradually add them over the flour and lard mixture. We knead gently until we obtain a fairly firm dough that can be shaped. It is important not to over-knead, to avoid a too heavy texture. Once the dough is ready, we divide it into equal-sized balls, which we will shape into the nut shells. These are baked on the stove, using specially designed molds that give them their characteristic shape. The shells will turn golden and crispy, and the aroma they emit will fill the entire kitchen.
Meanwhile, we turn our attention to the delicious cream. In a pot, we put the milk on the heat and wait for it to reach boiling point. In a separate bowl, we mix the sugar, flour, and cocoa. It is essential to mix these dry ingredients very well to avoid the formation of lumps. Once the milk has started to boil, we pour the sugar, flour, and cocoa mixture in a rain, stirring vigorously. This process will lead to the formation of a thick cream, and the sweet smell will become irresistible.
When the cream has reached the desired consistency, we take it off the heat and add the butter cut into cubes. We mix until the butter completely melts into the warm cream, resulting in a fine and glossy composition. Now, the cream is ready to fill the nut shells, which we have allowed to cool. We place the shells on a platter and, using a spoon or a piping bag, generously fill them with the delicious cream.
