Coconut and Chocolate Cake
To prepare a delightful sweet treat that combines the tropical flavors of coconut with the crunchy texture of cookies and the richness of chocolate, start by gathering the necessary ingredients. You will need: 150 g of butter, 200 g of sugar, 200 ml of milk, 200 g of grated coconut, 300 g of cookies, 150 g of dark or milk chocolate, depending on your preferences.
We begin by melting the butter in a large saucepan over low heat. Add the sugar and milk, stirring constantly to prevent sticking. It is important not to let the mixture reach boiling point, but just to melt the butter and combine it well with the sugar and milk. Once the butter is completely melted and the mixture is homogeneous, remove the saucepan from the heat and let it cool slightly.
After the mixture has cooled, add the grated coconut, keeping aside 4-5 tablespoons for decoration. Mix well to ensure that every strand of coconut is coated with the butter, sugar, and milk mixture. Then, add the finely crushed cookies. It is essential to use quality cookies, as they will give structure to the dessert. Mix again, so that the cookies absorb all the flavors and integrate well into the mixture.
Transfer the obtained mixture into a tray lined with cling film to facilitate the removal of the dessert after cooling. Level the mixture with a spatula, ensuring it has an even height of about 1.5 cm. After obtaining an even layer, we move on to melting the chocolate. This can be done either in a double boiler or in the microwave, being careful not to burn it. Once melted, let the chocolate cool slightly, then pour it evenly over the layer of coconut and cookies.
To add an extra touch of appearance and texture, sprinkle the reserved coconut on top. Then, place the tray in the refrigerator to cool and set, allowing the dessert to sit for at least 2 hours. Once set, carefully lift the dessert out of the tray by pulling on the cling film. Cut it into pieces of your desired size, whether you prefer small squares or larger shapes.
