To create a delicious and beautiful cake, we start by preparing the egg whites. In a clean and dry bowl, we beat the egg whites until we achieve a stiff and glossy foam. It is important that the bowl is free of any grease, as this could prevent the egg whites from whipping properly.

In another, larger bowl, we take care of the egg yolks. Here, we add hot water and begin to beat with a whisk or mixer until the mixture triples in volume and becomes fluffy. It is time to add the sugar and continue mixing until it completely dissolves, and the cream becomes homogeneous.

The next step is to integrate the dry ingredients. We sift the flour, cocoa powder, and baking powder together, ensuring there are no lumps. We add the mixture of dry ingredients over the egg yolk mixture and carefully fold it in using a spatula or wooden spoon to keep the air in the mixture.

Once we have a uniform mixture, we add the beaten egg whites, gently folding from the bottom up, so as not to lose the volume we have achieved. It is essential that this step is done delicately, so the cake remains fluffy and airy.

Now we prepare the baking pan, greasing it with butter and dusting it with flour to prevent sticking. We carefully pour the batter into the pan and place it in the preheated oven at 180 degrees Celsius. We bake the cake for about 30 minutes or until it passes the toothpick test. Once baked, we let the cake cool completely in the pan.

When it has reached room temperature, we cut the cake into three horizontal layers. We prepare to soak it with a fragrant cherry syrup. We mix the cherry juice with a little cherry liqueur (or sour cherry liqueur) and a splash of water to create a sweet and sour syrup. Generously soak each layer of the cake, then add cherries and a layer of whipped cream.

We repeat this process for each layer, ensuring the cake is well-moistened and full of flavors. The last layer of the cake will also be soaked, then we cover the entire cake with whipped cream, smoothing the surface well.

For decoration, we chop the chocolate into small pieces and sprinkle it over the cake, giving it an elegant and attractive look. We use our imagination to adorn the cake, adding cherries or other candied fruits for a splash of color and flavor. The cake is now ready to be enjoyed, a true delicacy that will delight any sweet tooth!
