Oven-baked vegetable frittata

The vegetables soften before going in the oven; the oven-baked vegetable frittata sets in 12-15 minutes, with telemea, a Romanian brined cheese, and cherry tomatoes on top. The middle stays soft, the edges set, the telemea picks up a little color, and the tomatoes soften and release their juices among the vegetables. I cut it into wide slices, not small cubes. Prep: 15 minutes. Cook: 23 minutes. Total time: 38 minutes. Servings: 2. About 490 kcal and 18 g protein per serving.
Ingredients
- 2 medium mushrooms (120 g)
- 1 small zucchini (180 g)
- 1 medium carrot (100 g)
- 1 medium bell pepper (150 g)
- 1 medium onion (150 g)
- 2 tablespoons oil
- 1 teaspoon oil
- 3 eggs
- 1 tablespoon sour cream (15 g)
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 1 teaspoon dried basil
- 100 g grated telemea
- 100 g cherry tomatoes
Preparation
1. Slice the mushrooms. Peel the carrot and onion, then dice them. Remove the seeds from the bell pepper and dice it; dice the zucchini too. 2. Heat 2 tablespoons of oil in a pan and sauté the vegetables for 8 minutes, until softened. 3. Grease an ovenproof dish with 1 teaspoon of oil and add the vegetables. Beat the eggs with the sour cream, salt, pepper and basil, then pour the mixture over the vegetables. 4. Sprinkle with grated telemea. Halve the cherry tomatoes and arrange them on top. Bake at 180 °C for 12-15 minutes, until the middle is set.
Notes
Serve it with green salad; texture-wise, it’s closer to a thick omelet than one flipped in a pan. It keeps covered in the fridge for up to 3 days and can be eaten cold. Eggs and dairy are the allergens to bear in mind. Choose a small, firm zucchini with few seeds; a large one may release more water. If the vegetables release liquid in the pan, keep cooking them until it evaporates, so the base isn’t watery. Telemea can be very salty, so taste it before adjusting the salt in the eggs.
Frequently asked questions
Can I use regular tomatoes instead of cherry tomatoes?
Yes, use 100 g of diced tomatoes and remove the seeds before putting them on top.
Can I add spinach?
Yes, sauté 80 g of fresh spinach separately until softened, then add it to the vegetables in the dish.
Can I use cașcaval instead of telemea?
Yes, use 100 g of grated cașcaval. It will brown more on top and have a less salty flavor.
