I offer you a tasty recipe for mushroom pastries, a perfect appetizer for any occasion, from a refined dinner to a casual gathering with friends. These pastries are easy to make and provide a perfect combination of crispy dough and flavorful mushroom filling. Let's get started!

Ingredients:
- 1 package of puff pastry (about 400g)
- 15 suitable mushrooms (Champignon or Shiitake, depending on preference)
- 3 green onions
- 100 g butter
- 100 g grated cheese (or cottage cheese for a healthier option)
- 1 egg
- 1 cup of sour cream
- 1 tablespoon of flour
- chopped fresh parsley
- 1 egg yolk for brushing
- salt and pepper to taste

Preparing the filling:
1. Start by washing the mushrooms well under cold running water, then let them drain. Chop the mushrooms into very small cubes for even cooking.
2. In a pot, add the butter and let it melt over medium heat. When the butter is completely melted, add the chopped mushrooms and sauté for about 5-7 minutes, until they release their juice and become slightly golden.
3. Add the finely chopped green onions and continue cooking for 2-3 minutes. Season with salt and pepper to taste.
4. Once the mushrooms are cooked, remove the pot from heat and let the mixture cool slightly. Then, add the grated cheese, sour cream, flour, and chopped parsley. Mix all the ingredients well until you obtain a homogeneous composition.

Preparing the pastries:
5. Preheat the oven to 200°C (convection) or 220°C (without convection). Line a baking tray with parchment paper.
6. Roll out the puff pastry on a lightly floured surface, being careful not to roll it too thin to maintain its fluffy texture.
7. Cut squares or circles from the pastry, depending on the desired shape. Add a tablespoon of the mushroom filling in the center of each pastry portion.
8. Fold the pastry over the filling and seal the edges with a fork, ensuring that the filling does not leak during baking.
9. Beat the egg yolk with a tablespoon of water and brush each pastry with this mixture to achieve a golden and shiny crust.

Baking:
10. Place the pastries on the prepared tray and bake in the preheated oven for 20-25 minutes, or until golden and crispy.

Serving:
The mushroom pastries are served warm, alongside a fresh salad or as an appetizer at a festive meal. You can add a personal touch by drizzling them with a bit of soy sauce or garlic sauce for extra flavor.

Useful tips:
- You can experiment with different types of mushrooms or even other vegetables, such as spinach or zucchini, to vary the taste.
- If you prefer a vegetarian version, you can replace the cheese with a vegan alternative and the sour cream with a plant-based yogurt.

These mushroom pastries are perfect for impressing guests and will surely bring a smile to the faces of those who taste them. Enjoy your meal!
