Ingredients:
- 500 g shortcrust pastry (you can use homemade or store-bought)
- 1 egg
- 3 medium potatoes
- 1 leek
- 200 g sour cream
- 150 g grated cheese
- Salt and pepper to taste
- Oil for greasing the pan

Step 1: Preparing the pastry
Start by preheating the oven to 180 degrees Celsius. Roll out the shortcrust pastry on a lightly floured surface until you achieve a sheet about 3 mm thick. Then, grease a tart pan with removable edges (about 24 cm in diameter) with oil. Carefully place the pastry in the pan, pressing it well on the bottom and sides to fit perfectly. Cut away the excess pastry from the edges.

Step 2: Preparing the filling
Peel the potatoes and cut them into small cubes, while you can slice the leek into rounds. In a skillet, add a little oil and sauté the leek over medium heat until it becomes soft, about 5-7 minutes. Add the diced potatoes and continue cooking for 10 minutes, stirring occasionally. At this point, you can add salt and pepper to taste. The potatoes should be lightly browned and nearly cooked.

Step 3: Combining the ingredients
In a bowl, beat the egg with the sour cream until it becomes a smooth mixture. Add the leek and potato mixture and half of the grated cheese. Mix well to incorporate all the ingredients.

Step 4: Assembling the tart
Pour the filling into the tart pan, spreading it evenly. Sprinkle the remaining cheese on top to achieve a golden and delicious crust. You can also add some fresh or dried herbs, such as thyme or rosemary, for an extra flavor boost.

Step 5: Baking
Place the tart in the preheated oven and bake for 30-35 minutes, or until the pastry turns golden and the filling is well cooked. Check with a toothpick to see if the potatoes are soft.

Let the tart cool for 10 minutes before slicing it. Serve it warm or at room temperature, alongside a fresh salad. You can also add a spoonful of sour cream on top for an even creamier taste.
