Cheese puff pastry pinwheels

Pepper paste is spread on the pastry beneath the cheese in cheese puff pastry pinwheels, baked for 20 minutes at 180°C. Telemea, cașcaval and red pepper come together in spirals, and the pastry turns golden and crisp at the edges, with the filling visible in every slice. I like them while they’re still a little warm, with a glass of ayran. Prep: 15 minutes. Cook: 20 minutes. Total time: 35 minutes. Servings: 4. Approximately 560 kcal and 18 g protein per serving.
Ingredients
- 400 g store-bought puff pastry
- 2 teaspoons pepper paste
- 100 g grated cașcaval
- 100 g telemea cheese
- 1/2 red bell pepper
Preparation
1. Leave the puff pastry sheet to thaw, then spread 2 teaspoons of pepper paste over it. 2. Sprinkle over the grated cașcaval, the telemea crumbled between your fingers, and the diced red pepper. 3. Roll the pastry up tightly and cut it into rolls about 2 cm thick. Arrange them on a baking tray lined with parchment paper, spiral side up. 4. Bake the pinwheels in a preheated oven at 180°C for 20 minutes, until golden brown.
Notes
I serve them with a tomato salad, without any other sauce. Keep the pinwheels in the fridge in a sealed container for up to 3 days; the pastry loses some of its crispness as it cools. The pastry should be thawed but still cold and easy to handle, otherwise it sticks and tears when rolled. If the pepper paste is watery, spread only the thick part and leave the liquid in the jar so it doesn’t make the pastry soggy. Telemea varies a lot in saltiness, so taste it before adding it to the pastry. For a less salty filling, you can replace the telemea with 100 g of well-drained fresh cheese. Thicker slices stay softer in the center, while thinner ones brown faster; keep an eye on the color toward the end of the 20 minutes. Puff pastry contains gluten, and telemea and cașcaval are dairy products.
Frequently asked questions
Why does the filling come out at the ends?
Leave about 1 cm clear at both ends when spreading the filling, and press the ends of the roll together before cutting.
Can I replace the cașcaval with mozzarella?
Yes, use 100 g of grated pizza mozzarella. Fresh mozzarella contains more liquid and can soften the pastry.
How should I arrange the pinwheels so they don’t come apart?
Tuck the end of the roll underneath and leave about 2 cm between the pieces on the tray.
