Mushroom cream soup with croutons

Soups - Mushroom cream soup with croutons by Flavia B. - Recipia

Mushroom cream soup with croutons is made from onion, carrot and a chicken stock cube, blended until smooth. The mushrooms are sautéed in oil first, then simmered with the carrot until soft, and the soup comes out light brown with a clear mushroom taste. I always serve it hot, with a spoonful of sour cream put right on top. Preparation: 20 minutes. Cooking: 27 minutes. Resting: 5 minutes. Total time: 52 minutes. Servings: 4. About 225 kcal and 7 g protein per serving.

Ingredients

  • 500 g champignon mushrooms
  • 1 medium onion (150 g)
  • 1 medium carrot (100 g)
  • 2 tablespoons oil
  • 1 chicken stock cube (10 g)
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1000 ml water
  • 15 g parsley
  • 60 g croutons
  • 4 tablespoons sour cream (at least 20% fat)

Preparation

1. We wash the mushrooms, slice them and cut the carrot into rounds. We peel the onion and chop it finely. 2. Heat 2 tablespoons of oil in a pot, add the onion and sweat it for 4 minutes, until glassy. 3. Add the sliced mushrooms and fry them for 5 minutes, until they release their water. 4. Add the carrot, the chicken stock cube, 1/2 teaspoon of salt, 1/2 teaspoon of ground pepper and 1000 ml boiling water. 5. Let it simmer on low heat for 15 minutes, until the carrot is soft, then let it cool for 5 minutes. 6. Blend the soup until smooth, simmer it for 3 more minutes and add the chopped parsley. 7. Serve hot, with croutons and sour cream on top.

Notes

Choose firm, dry mushrooms, because soft ones give a watery soup with no taste. If the carrot is cut thick, leave it on the heat for a few more minutes, until it gives slightly when pierced with a fork. The stock cube is quite salty, so taste before adding all the salt. It goes well with a slice of toasted bread or a simple green salad. It keeps 3 days in the fridge, and when reheating, thin it with a little water. For a creamier soup, add 100 ml of cooking cream after blending, with a few spoonfuls of hot soup first, and only warm it gently so it does not curdle. For a vegetarian version, replace the chicken stock cube with a vegetable stock cube of the same weight, and note that the croutons contain gluten.

Frequently asked questions

Can I use other mushrooms instead of champignons?

Yes, oyster mushrooms work well, but they are more delicate, so fry them for only 3 minutes instead of 5.

What if the soup comes out too thick after blending?

Add 100 ml of boiling water and simmer for 2 more minutes on low heat, until it thins out.

Can I blend the soup directly in the pot?

Yes, with a hand blender held submerged, for 2 minutes, until no pieces of carrot remain.

Can I use dried mushrooms?

Yes, 20 g of dried mushrooms soak for 20 minutes in 200 ml of lukewarm water, then they are chopped finely. The soaking water is strained and added to the soup in place of 200 ml of the boiling water.
