Chicken breast ciorbă, Romanian sour soup, in a multicooker

Chicken breast ciorbă with vegetables in a multicooker, a Romanian sour soup, is served hot for lunch with cabbage brine and lovage. The chicken breast, parboiled first, stays tender, while potatoes, peppers and tomatoes fill the broth with soft chunks and a tangy flavor. I chop the lovage a little coarsely, so I can see the little leaves in my bowl. Prep: 20 minutes. Cook: 80 minutes. Total time: 100 minutes. Serves: 6. Approximately 230 kcal and 25 g protein per serving.
Ingredients
- 1 boneless skinless chicken breast (600 g)
- 1500 ml water for the initial boil
- 2000 ml water for the multicooker
- 1 teaspoon salt
- 1 medium onion (150 g)
- 1/2 green pepper (75 g)
- 1/2 red pepper (75 g)
- 1 carrot (100 g)
- 4 medium potatoes (600 g)
- 4 medium tomatoes (400 g)
- 300 ml cabbage brine
- 15 g fresh lovage
- 1/2 teaspoon salt
Preparation
1. Peel and wash the onion, peppers, carrot, tomatoes and potatoes. Chop the onion, peppers and carrot, cut the potatoes into cubes and dice the tomatoes. 2. Bring 1500 ml water to a boil in a pot and boil the chicken breast for 10 minutes, until the outside turns white. Remove it and discard the water. 3. Put 2000 ml water, the onion, peppers, carrot, potatoes and 1 teaspoon salt in the multicooker. Select the Boil program for 15 minutes, until the potatoes start to soften. 4. Cut the chicken breast into pieces and add it to the appliance. Select the Stew program for 40 minutes, until the meat is no longer pink in the center and the potatoes are easily pierced. 5. Add the tomatoes and 300 ml cabbage brine. Run the Stew program for another 15 minutes, until the tomatoes soften. 6. When the program ends, the appliance switches to Keep warm. Add the chopped lovage and 1/2 teaspoon salt, then taste and adjust the salt.
Notes
A very thick breast can be sliced lengthwise before the brief boil; pieces of similar thickness cook more evenly. Cabbage brine varies a lot in saltiness and acidity, so taste it before adding the final salt; if it is too salty, use 200 ml and make up the difference with 100 ml water. Foam may form during the initial boil, and you can skim it off with a spoon. If the tomatoes are firm, dice them small before adding so they soften during the program. Serve the ciorbă with fresh bread. Store leftovers in a sealed container in the refrigerator for up to 3 days; reheat only the portion you need.
