Round Zucchini Stuffed with Tuna
Zucchini, versatile and delicious vegetables, appear in many recipes, but today we will focus on a recipe for stuffed zucchini with tuna, a perfect combination of flavors and textures. We start by washing the zucchini well under a stream of cold water, making sure to remove any residues or impurities. Once cleaned, we will place them in a pot of salted water to boil for about 2-3 minutes. This step will not only soften them slightly but will also help enhance their flavor. After the time is up, we take the zucchini out of the water and place them on a plate, letting them cool slightly.
The next step is to carefully cut off the top. Using a sharp knife, we remove the top part of the zucchini to create a perfect space for the filling. With the help of a spoon, we start to scoop out the flesh of the zucchini, being careful not to break the skin. The scooped flesh can be saved for use in other dishes or salads.
In a frying pan, we add olive oil and finely chopped onion. We let ourselves be carried away by the aroma of the sautéing onion, gradually adding the drained tuna. With a fork, we mash the tuna until it becomes a fine paste, then we add the diced tomato, which will bring an extra freshness and juiciness to the mixture. We cover everything with water and add our favorite spices: salt, pepper, oregano, or basil, to taste. We let the mixture simmer on low heat, stirring occasionally, until the liquid completely reduces, and the mixture becomes thicker and more aromatic.
Once the filling is ready, we return to the zucchini. We generously fill each zucchini, ensuring that each piece of vegetable is richly filled. We place the stuffed zucchinis in a disposable tray, adding a little water to prevent sticking and allow for even cooking. We preheat the oven to 180 degrees Celsius and place the tray in for about 30-40 minutes.
Five or ten minutes before taking them out, we sprinkle grated parmesan on top, which will melt in the oven and create a delicious crust. Then, we take the zucchinis out of the oven, letting them cool slightly before serving. This recipe is not only nutritious but also full of flavor, perfect for a family meal or a dinner with friends.
