Ingredients
- 1 kg fresh nettles (carefully selected)
- 1 large onion
- 50 - 75 ml oil (about 3/4 of a small glass)
- 1 head of garlic
- 3 tablespoons flour
- 2 tablespoons tomato paste
- 1 teaspoon sweet paprika
- Salt (to taste)
- Optional: eggs (1 egg per serving, for serving), freshly grated horseradish
Tools
- Household or surgical gloves (to handle nettles without getting stung)
- Large pot for boiling
- Strainer
- Blender (optional, for pureeing)
Step by step
1. Selecting and preparing the nettles
The first step in preparing this dish is to choose the finest nettles. Select young, green leaves and remove the thicker stems, keeping only the leaves. It is important to wash the nettles in 6-7 waters to ensure they are free from impurities. Wearing gloves is essential, as nettles can cause stings.
2. Blanching the nettles
Fill a large pot with water and bring it to a boil. When the water starts to boil, add the nettles in two or three batches, depending on the size of the pot. Blanching takes only a few minutes, especially if the nettles are young. Check if they are nearly cooked by squeezing a leaf between your fingers: it should easily break down. Once done, drain them in a strainer and let them cool.
3. Preparing the onion
While the nettles are cooling, peel and finely chop the onion. This will add a sweet and aromatic flavor to your dish.
4. Cooking the nettles
Once the nettles have cooled, you can either chop them finely or puree them using a blender. In a pot, add the oil and the chopped onion. Sauté the onion for 2-3 minutes until it becomes translucent. Add 2-3 tablespoons of nettle broth (the water in which the nettles were boiled) and keep it on the heat until the onion softens.
5. Adding the nettles
To the sautéed onion, add the nettle puree or chopped nettles, along with salt, and let them cook for a bit, stirring constantly to prevent sticking. Gradually add more nettle broth and let it simmer on low heat for about 15-20 minutes until the flavors meld together.
6. Preparing the sauce
In the meantime, mix the flour with the tomato paste and dilute it with a bit of nettle broth until you achieve a fluid consistency. Add the sweet paprika and combine well. When the nettles have cooked, gradually pour in the flour sauce, stirring continuously. Add more nettle broth as needed until you reach the desired consistency.
7. Finalizing the dish
When the dish is ready, adjust the salt to taste. Allow it to cool slightly before adding the crushed garlic. Mix well to distribute the flavors.
Serving
Serve the nettle with garlic warm, alongside hot polenta. For a touch of freshness, you can add freshly grated horseradish, green garlic, or even poached eggs. This dish is not only delicious but also healthy, being rich in vitamins and minerals.
Helpful tips
- Selecting nettles: Choose nettles when they are young, usually in spring or early summer. These are the most flavorful and least fibrous.
- Nettle broth: The water in which the nettles were boiled is full of nutrients. You can consume it as is or use it in other dishes.
- Variations: If you want to add extra flavor, you can include other vegetables, such as carrots or peppers, during cooking.
Nutritional benefits
Nettles are rich in vitamins A, C, K, as well as essential minerals like iron, calcium, and magnesium. They have anti-inflammatory properties and are excellent for detoxifying the body.
