Hello! Today I want to present to you a dish specific to this season, which brings with it rich flavors and warm colors. Even though I am a bit late with this proposal, the recipe is definitely worth keeping and trying, not just in its season, but anytime you want to indulge in a healthy and tasty dish.

This recipe does not require special preparation, so you don’t have to read through thick cookbooks. Anyone who tries it will succeed and enjoy a dish full of natural flavors that will delight even the most demanding among us.

To start, we wash the peppers well, remove the stems and seeds, and then cut them into small pieces so that they integrate perfectly into the dish. We continue with the onion, which we peel, wash, and chop finely, being careful not to make our eyes burn. We wash the tomatoes and peel them. To make this easier, we make an X on the bottom of the tomatoes, dip them in boiling water for a few seconds, and then we can peel them effortlessly. After peeling, we chop them as well.

Next, we prepare the carrots. We wash the carrots, peel them, rinse them, and grate them on a coarse grater so that they release their sweetness into the mixture.

In a tall pot, we put oil and place it on the heat. When the oil is hot, we add the chopped onion and let it brown slightly, feeling its enticing aroma spread throughout the kitchen. We add the peppers and let them soften a bit, stirring occasionally. If necessary, we drizzle a little water to help with the steaming cooking process.

After the peppers have softened, we add the grated carrot and finely chopped garlic, which will give the dish a special flavor. Then, we add the tomatoes and let everything simmer on low heat until the liquid evaporates and the ingredients blend perfectly.

At the end, we season with salt, pepper (optional), and fresh herbs (optional), to bring an extra touch of freshness. This dish is not only healthy but also colorful and flavorful, perfect for autumn meals.
