Fried zucchini with garlic sauce and dill is a special dish, perfect as a side or even as an appetizer. We start by preparing the zucchinis: they are peeled, then cut into thick slices of about 1 cm. These slices will become delicious and crispy after frying. After cutting the zucchinis, we sprinkle a little salt over them to draw out the excess water and enhance their flavor. We let the zucchinis sit for about 10 minutes, during which we will prepare a fragrant garlic sauce.

For the garlic sauce, we crush a few cloves of garlic in a mortar or with a press, adding a pinch of salt to enhance its aroma. We mix the crushed garlic with 2 tablespoons of olive oil, which will add an elegant note to this sauce. Once we have obtained a homogeneous paste, we add 2 tablespoons of vinegar and 250 ml of water, mixing well to combine the ingredients. This garlic sauce will provide an intense and refreshing taste to the fried zucchinis.

Once the 10 minutes have passed, we squeeze the zucchini slices in our hands to remove the excess water. Now, we coat them in flour, ensuring that each slice is well covered. This step will help form a crispy crust during frying. We heat oil in a deep pan, and when it is hot enough, we add the zucchinis. We fry them on both sides until they become golden and crispy, which will take about 3-4 minutes on each side.

After the zucchinis are fried, we remove them to a plate lined with paper towels to absorb the excess oil. We then layer the zucchinis in a bowl, sprinkle with finely chopped dill, and pour some of the prepared garlic sauce over them while they are still warm. We continue this process until we have used all the zucchini slices. Finally, we cover the bowl with a lid and let the dish cool slightly, allowing the flavors to blend perfectly. Serve the fried zucchinis with garlic sauce and dill alongside a slice of fresh bread or as a side dish to various main courses. This simple yet delicious recipe will surely be appreciated by everyone who tastes it!
