Vegetable Soup
To prepare a delicious vegetable soup, we start by preparing the necessary ingredients. In a food processor, we add the onion and carrot, which we will chop finely. These two ingredients are essential to give the soup a rich flavor, and the carrot will provide a pleasant color tone. After chopping them, we transfer them to a large pot, in which we have previously added a little sunflower or olive oil, depending on personal preferences.
We set the heat to medium and let the onion and carrot sauté for about a minute, until they become translucent and release their aromas. It is important not to leave them on the heat too long, so they do not burn, but just soften a little. Although paprika has not been added in this recipe, we do not worry, as the color of the soup will be intensified by the fresh carrot.
Once we have obtained a flavorful base, we pour water over the vegetables, making sure to cover the ingredients so they cook evenly. The next step is to add the vegetable pack, which contains a varied mix of dehydrated vegetables, bringing an extra flavor. Then, we cut the potatoes into suitable cubes and add them to the pot, contributing to the soup's consistency.
To enhance the taste of the dish, we add fresh chopped parsley, which will provide a fresh and vibrant aroma. We season the soup with salt, pepper, and other preferred spices, such as thyme or basil, to give it a personalized character. We let the soup simmer under the lid on low heat for about 20-30 minutes, until all the vegetables become tender.
Finally, when the soup is ready, we add a final touch of freshness with finely chopped green parsley. We serve the soup hot, alongside sour cream, which will add a note of creaminess and balance the flavors.
