Grilled eggplant baked with cheese

Grilled eggplant baked with cheese means browned rounds cooked on a grill pan and gratinated for 15 minutes at 200°C. Camembert and three kinds of cheese melt on top, with oyster mushrooms and a cold tomato, cucumber and garlic sauce on the side. I cut the eggplant into rounds about as thick as a finger, so they stay whole under the cheese. Prep: 25 minutes. Cooking: 65 minutes. Total time: 90 minutes. Serves: 8. Approximately 400 kcal and 21 g protein per serving.
Ingredients
For the eggplant
- 1 very large eggplant (1400 g)
- 1 Camembert wheel (250 g)
- 5 slices sliced cheese (100 g)
- 100 g cheese cut into small pieces
- 150 g grated cheese
- 1 teaspoon dried dill
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
For the mushrooms
- 500 g oyster mushrooms
- 3 tablespoons oil
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 15 g fresh parsley
For the sauce
- 2 meaty tomatoes (300 g)
- 1 head of garlic (50 g)
- 1 medium cucumber (250 g)
- 1/4 teaspoon salt
Preparation
1. Rinse the eggplant under cold running water, pat it dry and cut it into rounds about as thick as a finger. 2. Heat a grill pan. Cook the rounds in batches, about 40 minutes in total, turning them after 3 minutes on each side. They’re ready when they soften slightly and have browned grill marks. 3. Arrange the slices on baking paper on the oven tray. Cut the Camembert wheel, the 5 slices of cheese and the cheese into small pieces, then put the cheeses on the eggplant. Sprinkle with 1 teaspoon dried dill, 1 teaspoon salt and 1/2 teaspoon pepper. 4. Bake the tray for 15 minutes at 200°C with the fan on, until the cheese melts. 5. Rinse the oyster mushrooms, cut them into pieces and fry them in 3 tablespoons oil for 10 minutes, until they soften and brown at the edges. Season with 1 teaspoon salt and 1/2 teaspoon pepper, then sprinkle with the chopped parsley. 6. Cut up the washed tomatoes with the cores removed, the well-washed cucumber with its skin on, and the garlic cloves. Process the vegetables in a food processor, then season the sauce with 1/4 teaspoon salt.
Notes
Choose a firm eggplant with shiny skin. Very soft ones soften quickly on the grill. If the eggplant is thicker than a finger, leave the rounds on the grill a little longer and check that they give slightly in the middle. Very juicy tomatoes can make the sauce runny, so remove the seeds before processing them. The sauce can be made a few hours ahead and kept covered in the fridge, and the cooked dish keeps in the fridge for up to 3 days. I halve the amounts when I cook for four, because a full tray takes up space on the table. Like little eggplant pizzas, these go well with toasted bread to scoop up the leftover sauce. If you replace the Camembert, use 250 g well-drained mozzarella so it doesn’t leave whey on the slices. The dish contains dairy, and for a less pungent sauce use only 6 garlic cloves.
Frequently asked questions
Can I use small eggplants?
Yes, you can use 3 eggplants of about 450 g each. Cut them into rounds about as thick as a finger.
Can I replace the oyster mushrooms with button mushrooms?
Yes, use 500 g button mushrooms cut into quarters and fry them for 12 minutes, until browned.
Can I use an electric grill?
Yes, set it to 220°C and cook the rounds for about 4 minutes on each side, until they soften slightly.
How do I stop the cheese from sliding off the slices?
Leave an edge of about 5 mm clear when you put the cheese on the rounds.
