Cauliflower with Mushrooms in the Oven #1
Cauliflower is one of the favorite vegetables for many of us, due to its versatility and refined taste. This baked cauliflower recipe with mushrooms is not only delicious but also easy to prepare, making it perfect for a family dinner or a special occasion.
To begin, wash the cauliflower well under a stream of cold water, ensuring you remove any impurities or pesticides. After cleaning the cauliflower of stems and leaves, break it into small, evenly sized florets so that they cook evenly. Place the cauliflower florets in a pot of cold water and add a generous tablespoon of salt. Let them boil for about 15 minutes until they become slightly tender but not too soft. It is important not to overcook them, as we want to retain their texture.
Meanwhile, prepare the baking tray. Take a paper towel and soak it with olive oil, then grease the bottom and sides of the tray well. This step will prevent the food from sticking to the tray. After greasing the tray, sprinkle an even layer of breadcrumbs on the bottom, ensuring you cover the entire surface well.
Now it's time to prepare the filling. Wash the mushrooms well under running water and slice them thinly. Peel and finely chop the onion. In a pan, add 2-3 tablespoons of olive oil and heat over medium heat. When the oil is hot, add the chopped onion and sauté until it becomes translucent and slightly golden. Then, add the sliced mushrooms and season with salt, pepper, and fresh or dried dill, to taste. Stir constantly, allowing the mushrooms to cook until all the water they release has evaporated, and the mixture becomes slightly browned.
After the cauliflower has boiled, remove it from the water and drain it well. Arrange the cauliflower florets in an even layer in the prepared tray, then distribute slices of butter over it to add extra flavor. Next, add the mushroom mixture on top of the cauliflower, followed by a layer of breadcrumbs and, again, a few slices of butter. Finally, pour a few tablespoons of sour cream on top, which will add creaminess and a delicious taste.
Preheat the oven to 180 degrees Celsius and place the tray in the oven for about 10-15 minutes. When you notice that the dish is becoming golden and appetizing, remove the tray and sprinkle grated cheese on top, which will melt and form a golden and delicious crust. Put it back in the oven for a few minutes until the cheese is completely melted and has a pleasant texture.
